I made something filler, something quick and delicious for dinner yesterday.
The thing was, yesterday I got so damn hungry in the evening, may be after a long hard working day. And I wanted to eat something spicy and quick. As soon as I reached home, I rushed to the kitchen and looked for some healthy alternatives, but unfortunately couldn’t find anything in my pantry which was spicy and also healthy at the same time. I looked all around and found a cashew jar staring at me, as if it was saying: “Come on, what are you waiting for? Attack me.”

Left with no other choice, I attacked. 😀 Had some handful of cashews along with strawberry yogurt. It was satisfying and filler as an evening snack. But I still wanted something spicy for dinner.
I opened the refrigerator and stood at its front for some minutes, which felt like an eternity. Then I saw a magic pouch — it was a pouch of Teriyaki sauce.

At my first sight I said to it:

Hehehe, that was a little dramatic. But I did look at that teriyaki sauce with so much love. Then I only thought of needing a big bowl of teriyaki noodles.
So, there was some good news for me — it was that the Vegetable Teriyaki Noodles are perfect quick, spicy and easy meal I wanted at that time. And that’s the reason I’ve come up with the idea of making ‘Vegetable Teriyaki Noodles’ for dinner.

Well, it’s not like that you cannot eat this for lunch. You can eat this whenever you want. I simply ate this for dinner yesterday and loved every single bite of it. And I have some leftovers, so I will have it for lunch too.

It’s yummy! I added veggies for their color appeal, health, crunch and extra deliciousness, plus a little touch of hot sauce for some coziness. Hot sauce is just a very little twist, but I promise it makes awesome noodles.
I wanted to share this recipe for so long but every time I made this, I ate them right away. Simply could not resist the aroma. Thus, there were no leftovers so I couldn’t click any photos.
But this time I made some extra because this time I wanted to click some photos. The only problem was the self-control part. But I managed somehow.
This is a nice meal which is easy, quick and filler! And this is vegan too. There is no cheese or cream, only veggies. So basically, this is an easy teriyaki stir fry with noodles and vegetables. A perfect healthy lunch idea that you can take to work or on the go.
Yeah, I am serious. With all that said, I really do love these noodles.
These noodles are good on their own completely, but I would suggest you have these with a glass of red wine. They will taste a lot nicer. It’s a completely vegan noodle dish, and perfect for a healthy lunch/dinner.

Vegetable Teriyaki Noodles - Teriyaki Stir Fry Noodles (Step-by-step photo instructions)
How To Make Vegetable Teriyaki Noodles:
- First, put a large pot of water on to boil. When it boils, add in the noodles.
- Once the noodles are cooked, drain them in a colander or strainer. Rinse noodles under a running tap with some cold water, and then add in 2 teaspoons of vegetable oil and mix well, so they don’t stick together.
- Heat 2 tablespoons of oil in another pan, and add chopped garlic. Mix well and saute for a minute.
- Add all the vegetables, ground pepper and chili flakes, and saute them till vegetables are almost cooked but still crunchy.
- Add in the teriyaki sauce and let everything soak up the sauce for a few minutes.
- Now add in the cooked noodles, mix well and let them soak up the remaining sauce.
- Add hot sauce and salt to taste. Mix well and cook for a few more minutes.
- Garnish Vegetable Teriyaki Noodles with some sesame seeds and roasted peanuts. Enjoy!
