Spring-tastic times would come soon: Although there are no signs of spring yet, but I am feeling like spring would be here soon! Is it the vibe or it’s just that I know that this time of the year should be spring?
The temperature is super cold, below 5°C, but the sun finally came out yesterday. I didn’t see even a single flower yet. In spite of all this, am I still thinking that spring would be here soon? Yes, I do.
Vibes are right: That means it’s purely my vibe which tells me about the coming spring! So let’s go with the vibes, at least that would make me feel positive! 😉 And after all, we are all up for positive thoughts, right?
Spring Food: The thought of spring makes me crave all the fresh spring like food. And why spring food in spring? Because there is no substitute to spring food, so let’s make the most of it now. And the inspiration of spring inspires yellow food, so how about if I go with some bright Thai food?

This is a one pan meal which is the best part. I have been making the curried mac on a weekly basis. I not only love that they add a healthy source of protein, but also the added flavor and yummyness.
Classic flavours: I kept the flavors pretty simple yet classic – mushroom, onions, yellow curry paste, curry powder and coconut milk. That was it. Some nutty + green toppings if you wish. But I am pretty okay without the toppings too! 🙂
Simply stir fry veggies and add curry paste. Pasta cooked in coconut milk. And the super rich, classic, creamy and flavorful paste would be ready. YESSS!

- Vegetable oil - 2 tbsp
- Onion, sliced - 1 cup
- Mushroom, sliced - 1 cup
- Yellow Thai curry paste - 150g
- Curry powder - 1 tbsp
- Salt to taste
- Light coconut milk - 2.5 cup
- Macaroni - 2 cup ( I am using wholegrain)
- Cilantro leaves, for garnish
- Lemon wedges for serving
- In a large skillet, heat oil over medium-high heat.
- Add onion and saute well. Add mushroom and saute. Add salt and cook for 2 minutes.
- Now add Thai yellow Curry Paste and mix well.
- Add coconut milk and stir well. Add macaroni and let it come to boil.
- Add curry powder and stir-in it well again.
- Cover and cook until macaroni is cooked.
- Stir occasionally, and add some more water if needed.
- Squeeze some lemon juice and garnish with cilantro leaves.
- Top with peanuts and enjoy!
