I love cheesecake too. My favorites are all types of cheesecakes. Actually, the name ‘cheesecake’ itself is enough to tickle my tastebuds.

Thus, I am sharing this parfait recipe without giving a single thought. And another justification of sharing it today is that I cannot wait for next few months to share this. This completely no-bake treat combines my favorite fruit {peach} with a sweet + tangy cream cheese filling. It also has a very pretty crunchy and contrasting gingerbread layer which is hard to resist. A sweet, tart, creamy flavours and crunchy and velvety texture makes this a dreamy dessert.

How to make No-bake Peach Gingerbread Cheesecake Parfait?

Making this parfait is super simple and so much fun. All you need to do is create layers. Make a delicious bottom layer of gingerbread cookie and a second layer of cream cheese. One more layer of cookies and another layer of cheesecake.

Top with fresh peach slices. Topped with gingerbread crust and a drizzle of chocolate sauce. DONE. Yes, it is that simple.

To make peach syrup, put all the peach Syrup ingredients in a medium saucepan. Cook over medium heat until it begins to thicken.

Remove from heat and let it cool completely. Blend peaches until smooth. Press the puree through a sieve and discard the solids. Your peach syrup is ready. Keep it aside.

How to make Cream Cheese Layer ?

Whisk cream cheese and vanilla. Add sugar, lemon juice and whip. And whipped topping in bowl. Add whipped cream and whisk well to combine. Then add peach syrup and fold gently.

How to assemble no bake peach cheesecake parfait?

Layer crumbled cookies, cheesecake mixture in parfait glass. Repeat layers. Sprinkle with cookie crumbs.
