This No-bake Peach Gingerbread Cheesecake Parfait is ridiculously easy. This has peach with a sweet + tangy cream cheese filling. It also has a very pretty crunchy and distinct gingerbread layer. A sweet, tart, creamy, crunchy dream of a dessert.

I know, I know, what you are thinking about today’s recipe title. Peach recipe? Now in the Autumn?

Well, I’ll take any excuse to make something delicious with peach, even if that excuse is about the season of ‘peach’ is not all gone. I must say that peach season is still here, because I saw some bright and beautiful peaches in my last visit to the grocery store. And, and, and, I could not resist, so had to buy a BIG batch of peaches. And instantly I said to myself, “How about some delicious parfaits?” That sounded terrific. So it had to be peach parfait then.

And of course I ate a couple of them just as a fruit because I just LOVE peaches. And with the rest I made this awesome cheesecake parfait. I love cheesecake too. My favorites are all types of cheesecakes. Actually, the name ‘cheesecake’ itself is enough to tickle my tastebuds.

Because you would simply love it. Thus, I am sharing this parfait recipe without giving a single thought. And another justification of sharing it today is that I cannot wait for next few months to share this. So I had to share it today. It’s just that good.  

I think most of you would also be getting peaches where you live, and if you see any peaches in your grocery store, I would say go and grab those before anyone else picks them up. They might be favourites for some. You know who I mean 😉

But if you don’t get fresh peaches then go for canned ones, because they would work just fine. Basically what I’m saying is, you’ve got no option. Making this cheesecake parfait is fast, and no baking time included. You don’t need to be dedicated to wait so long to dive in. Simple and quick desserts are always in my hit list. These are the kind of desserts where I can throw ingredients together, and enjoy them the same day!

This No-bake Peach Gingerbread Cheesecake Parfait is ridiculously easy. This completely no-bake treat combines my favorite fruit {peach} with a sweet + tangy cream cheese filling. It also has a very pretty crunchy and distinct gingerbread layer. A sweet, tart, creamy, crunchy dream of a dessert. OH! This is such a dreamy dessert.

It has a delicious bottom layer of gingerbread cookie and a second layer of cream cheese. One more layer of cookies and another layer of cheesecake. Sliced with fresh peach slices. Topped with gingerbread crust and a drizzle of chocolate sauce. DONE.

I don’t know about you guys, but with the sweet stuff, I can’t keep my hands off. There’s a hidden force which drives me crazy to finish the whole cake/desserts. It’s much easier to control myself when it is divided into single servings. So having a single-serving dessert like this really helps me not to eat the entire dessert at once.

Addition of gingerbread makes them a little wintery too! What say? 🙂

And another great thing about these parfait are, they can easily be made ahead of any occasion. Just keep them in the fridge, if you can keep. Or I suggest hide them, until you are ready to serve. 😉

Put all the ingredients in a medium saucepan.Cook over medium heat until it begins to thicken.

Remove from heat and let it cool completely. Blend peaches until smooth. Press the puree through a sieve and discard the solids. Set aside.

Whisk cream cheese and vanilla. Add sugar, lemon juice and whip. And whipped topping in bowl. Add whipped cream and whisk to well.  Add peach syrup and fold gently.

Layer crumbled cookies, cheesecake mixture in parfait glass. Repeat layers. Sprinkle with cookie crumbs. Garnish with sliced Peach, and drizzle chocolate sauce.

Place in the fridge and chill for about 1-2 hours. Serve with spoons.

Ingredients
For Peach Puree:
  • peach slices - 1 cup
  • sugar - ¼ cup
  • lemon juice - 1 tbsp
For Cheesecake layer:
  • cream cheese - 250 g
  • sugar - 3 tbsp
  • lemon juice - 1 tsp
  • vanilla bean - 1 tsp
  • whipped cream - ½ cup
To Assemble:
  • gingerbread cookies, crumbled - 12-14 pieces
  • cream cheese filling
  • peach slices
  • chocolate sauce
  • cookie crumbs
Instructions
