I always like to use fresh mozzarella because it tastes best. For me, the fresher the cheese, the better the taste. However, fresh mozzarella cheese isn’t that great of a melting cheese. So, if you really want those melting cheese strings, then go for grated/shredded cheese.

If you are somebody who likes the texture of melting cheese, then I would advise you add a generous amount of shredded mozzarella cheese to your sandwiches. It’s because shredded mozzarella cheese melts many times better. This way molten mozzarella cheese will absolutely spill out from the sides of your grilled sandwich.

• 2 Tbsp Olive Oil
• 8 Slices Bread
• 1 Cup Cherry Tomatoes, Sliced
• 1 Onion, Sliced
• 8 Thick Slices Mozzarella Cheese
• Salt And Freshly Ground Black Pepper
• Fresh Basil Leaves

1. Heat a non-stick grill pan over medium heat and coat lightly with olive oil.
2. Brush 1 side of 4 bread slices with extra virgin olive oil.
3. Place 2 of the bread slices facing oil side down on hot grill pan.
4. Layer mozzarella cheese slices, sliced tomatoes, sliced onions, and basil leaves.
5. Drizzled with few drops of olive oil and sprinkle with salt and pepper.
6. Top with the 2 slices of bread.
7. Brush over the outsides of each sandwich.
8. Toast the sandwiches until they are golden on the bottom. (Press down with a spatula to flatten sandwich a bit.)
9. Flip the sandwiches and toast until cheese is melted and golden.
