Initially I thought I would not share any recipe today, but then I decided to share a small post. And hey, it’s a bright sunny day again today. So I could not stop myself from sharing. And also I can not be away from you all for so long. I missed you all, and I passionately MEAN it! 🙂
So I decided to share a simple Salad recipe today. This is Apple Cucumber Mozzarella Pearls Salad. I assume it’s one of the prettiest summer salads, at least today when I am all in Salad mood! 😉
It looks elegant and it is HEALTHY too. Usually, I don’t share salad recipes. And I don’t even remember when was the last time I posted a salad recipe. Grrrr, did I really not share any Salad for so long? Oh! I really didn’t 🙁
But the wait is over now. The day has arrived today when I will share one of my salad recipes. You can certainly see that I am all in the Salad state today.
Why am I in so Salad mood today? Welp, you all know that I was away for a short trip. And you all know for most of us, we end up eating too much during our trips. Sometimes we eat almost countless number of times! At least I do that! 🙁
So I wanted some detox diet with all my heart. Or I would rather say that my body shrieked for a detox diet. I could truly hear my tummy growling, as if it is grumbling and saying — I need DETOX! I need DETOX! I need DETOX! 🙂 And I had to reply, “okay okay I got it!” 😉
Salad is the best detox diet in my opinion. So today when I saw this Apple Cucumber Mozzarella Pearls Salad, it felt like this is the perfect dish to share. It just motivated me to share this graceful and energetic bowl of YUM with you all. You know, it was lying in my drafts for over a month.
This salad is exactly like my today’s light and happy mood after a short time out! This is fresh, light, healthy and energetic.

Actually on the day when I made this salad, I kind of just walked to my kitchen and started grabbing ingredients. So it was an accidental success. Well, it wouldn’t be an exaggeration if I say salads can never go wrong. Right? This is one of those rare things, we really don’t need to plan so much for!
In my opinion unplanned salads are one of the best recipes! You play with your ingredients, and can always customize it! Sometimes we all need these random and quick recipes, and they are always come out best in a way!
The point is that this is a cupboard friendly salad. Use whatever you have got in kitchen shelves! 🙂
And not to mention that it’s super fun to make. I guess as the summers are coming, I will be sharing more of the salad recipes in the coming days! SO get ready to be all SUMMERY with me! And I hope this is going to be a golden summer of my life with lots and lots of fresh Salads! What say? 😀

In a large bowl, combine the cucumber, apple, lettuce, cheese, parsley and keep it aside.
Take a small bowl, and whisk the lemon juice, oil, salt, crushed red pepper, and ground black pepper.
Pour over cucumber mixture, and toss well to coat.
Just before serving, add croutons, raisins, pistachio and sprinkle some chili pepper. Serve along with buttered crisp bread. Enjoy!

- lettuce, roughly chopped - 4 medium heads
- fresh mozzarella cheese pearls, drained - 1 cup
- halved, and sliced cucumber - 2 cups
- parsley, fresh minced - 1 tbsp
- lemon juice - 2 tbsp
- olive oil - 2 tbsp
- salt - ¼ tsp
- ground black pepper - ¼ tsp
- croutons - 1 cup
- raisins - 2 tbsp
- pistachio, chopped - 2 tbsp
- crushed red pepper - 1 tsp
