For this pudding, you just need to mix, blend some natural ingredients, and chill them until set. This pudding takes 1-2 hours to set, but the effective cooking time is only 5 minutes.

What are the ingredients needed for Chocolate Coffee Chia Pudding?

This chia seeds pudding is whipped up using a few humble ingredients that are easily available in any kitchen.

These ingredients are:

  1. Chia Seeds: 

For this chia pudding recipe, you can use black or white chia seeds. Both would work fine here. Organic seeds are the BEST.

  1. Cacao powder:

For this recipe, I have used a super healthy and natural cacao bliss blend. 

  1. Unsweetened Coconut Milk or Unsweetened Almond Milk: 

I used full cream coconut milk in this pudding recipe, but you can also use almond milk.

  1. Instant coffee powder:

I have added some instant coffee powder for a hint of coffee to this pudding. You can also add brewed coffee or espresso here. Adding coffee is optional though. So if you are not into coffee, then feel free to omit it from the recipe.

  1. Maple Syrup:

I have added maple syrup for this recipe, but you can also swap it with honey, coconut sugar, or any other sweetener of your choice.

  1. Salt:

A pinch of salt spruces up the taste of this chia pudding. So adding salt is highly recommended here.

  1. Vanilla:

A dash of vanilla adds a subtle flavor to this pudding which glorifies the overall taste, so it is highly suggested. Instead of vanilla extract, you can also use vanilla bean or paste.

Toppings of your choice:

I used bananas, strawberries, chocolate chunks, chopped walnut, desiccated coconut, and chocolate syrup here.

  • Nuts and seeds (walnuts, almonds, pistachios, cashews, pecans, coconut, chia seeds)

  • Nut butter (peanut butter or almond butter )

  • Cacao nibs

  • Chocolate shavings

  • Chocolate chips/chunks

How to Make Chocolate Coffee Chia Pudding?

Making Chocolate Coffee Chia Pudding is so basic and straightforward. Plus, this is a no-cook recipe. To make chocolate coffee chia pudding, you need to simply throw the ingredients in a blender to blend. And let it set. That’s it! 

This is how you make it in 8 simple steps:

Step 1: Add chia seeds to a blender and pulse them.

Step 2: Add in coconut milk, cacao/cocoa powder, vanilla, coffee, and maple syrup.

Step 3: Blend! Add more milk and stir well to incorporate everything.

Step 4:  Cover and chill for 1-2 hours to set.

Step 5: Slice bananas and strawberries. 

Step 6: Place sliced bananas, desiccated coconut, chocolate chunks, walnut into serving glasses or jars.

Step 7: Fill the glass with chocolate coffee chia pudding.

Step 8: Top with bananas, strawberries, and your favorite toppings. Enjoy!

What are the Pro tips, tricks, and variations to make your best chocolate coffee chia pudding?

Tip 1. For this recipe, I have pulsed chia seeds. This is because ground chia seeds give more pudding kinda texture. However, you can also make this chocolate coffee chia pudding without blending it in a blender. Simply throw all the ingredients in a bowl, stir, and let it set.

Tip 2. The recipe itself is made for 3 servings, but it can easily be halved, doubled, or tripled for an easy grab-and-go breakfast or healthy snack. 

Tip 3. Store in individual containers that you can easily grab as you need them. This way you can devour this pudding for a couple of days.

Tip 4. I have used creamy and thick coconut milk for this chocolate coffee chia pudding recipe because it gives a nice rich and creamy texture to this pudding. But you can also use light coconut milk for this recipe.

Tip 5. I added 2.5 tablespoons of sweetener for about 3 servings of this pudding. Feel free to adjust the amount of sweetener according to your taste buds.

Tip 6. To make this pudding more filler, you can also use some granola or muesli toppings for this pudding.

Tip 7. Make sure to always add the toppings right before serving.

Tip 8. You can also replace maple syrup with 2 tablespoons of pureed dates.

Tip 9. You can refrigerate any leftovers. Chocolate Coffee Chia Pudding would stay fresh for up to 3-4 days.

Tip 10. Feel free to adjust the texture of your pudding according to your taste preference. If you think your pudding is too thick and dense, then you can add 2-3 tablespoons of coconut milk (or as needed) and mix well.

Tip 11. I used banana, strawberry, chocolate chunks, desiccated coconut, and walnut toppings. However, you can use any of your favorite toppings.

INGREDIENTS

For Chocolate Coffee Chia Pudding
  • 1/2 cup chia seeds
  • 2 cups coconut milk
  • 1/4 cup cacao/cocoa powder
  • 1 teaspoon instant coffee powder
  • 2.5 tablespoons maple syrup
  • 1/2 teaspoon vanilla extract
  • 1 pinch of salt
For Toppings
  • Sliced bananas
  • Sliced strawberries
  • Desiccated coconut
  • Chopped walnuts
  • Chocolate chunks/chips
  • Chocolate syrup
  • Chia seeds

INSTRUCTIONS:

For making Chocolate Coffee Chia Pudding
  1. Place the chia seed into a blender and pulse for about 30-40 seconds to form ground chia seeds.

  2. Now add 1 cup coconut milk, instant coffee powder, vanilla extract, and maple syrup to the blender.

  3. Blend again for about 1 minute or until all the ingredients are incorporated together.

  4. Now gradually add about 1 cup of coconut milk.

  5. Stir well until everything is well combined.

  6. You can enjoy it straight away, or cover the container and refrigerate for 1-2 hours.

  7. Into a serving glass/jar add banana slices, 1/2 teaspoon chopped walnut, 1/2 teaspoon desiccated coconut, chocolate chunks, and about 1/4 teaspoon chia seeds.

  8. Fill the glass/jar with chocolate coffee chia pudding.
