New year greetings now? Seriously? Yes, yes, I am aware of the fact that the first month of January is about to end and I am still wishing a new year. Of course, I have shared some of my existing posts, but officially this is my first post in 2018 and I just want to wish you all a very Happy New Year.

I don’t know how many of you noticed that I have been away from my dear blog for more than a month. The thing is that I was holidaying in India. Yeah, that’s true. And now I am back with lots of immeasurable memories to treasure throughout the year which would surely keep me going. Anyhow, who won’t be pretty delighted to meet the family and friends? No one, right?

I had really fun time during holidays meeting loved ones, and hope that you guys are doing great too and 2018 is treating you very well. Little-A had a long list of ‘sweets-to-eat-in-India’, and she ticked almost everything off her list. Well, my parents made sure that she checks-out everything. It was also a bonding time for her with her Grandparents, uncles, aunts, and cousins. Little-A was so thrilled to meet them all.

Ticking all ‘sweets-to-eat-in-India’ list means that she tried many ‘Mithai’s’ aka Indian sweets throughout her visit and so did I. Well, in my case I had my own eat-to-do list. So I also ate spicy food such as chaats, Chola Bhatura, Mirchi Vada, Bread Pakora, Samosas, khaman, kachori, pakora, and list went on.

There is nothing better than Mom’s food, and you only know the importance of it when you don’t get it often. And by God’s grace, during this visit, I ate almost every mom’s made dish which I craved.

In India there is popular custom to start any new project (or celebration) with something sweet. They say, “Muuh meetha ho jaye”, meaning let’s eat something sweet. Or some say, “Kuch meethe se shuruaat karte hain”, meaning let’s start with something sweet.
By telling you all this means, that I also want to start my new year’s first post on a sweet note, and that’s why I have a sweet bonanza for you all.

This is “Instant Coconut Ladoo – 3 ways”. And these three types of irresistible coconut ladoos are:

  1. Coconut Cardamom Ladoo
  2. Coconut Rose Ladoo
  3. Coconut Saffron Ladoo

Coconut ladoo is an old-fashioned Indian sweet adored by every age group. These visually stunning ladoos make a great festive treat, and they are also wonderful as a gift during festivals such as Holi, Diwali. They are just perfect for any celebrations and other auspicious occasions. Today I am sharing a very simple recipe for this instant coconut ladoo. This coconut based sweet can be made using freshly grated coconut or desiccated coconut. For the ease, I have used desiccated coconut here.


You can sweeten them up with sugar, jaggery, palm sugar, coconut sugar, or sweetened condensed milk. Since this is a speedy and instant version I am using condensed milk here. I haven’t added any nuts here, but feel free to add your preferred nuts.

So the two essential key ingredients for making these sensational laddos are: coconut and condensed milk. You can simply make super delish ladoos out of these two magical ingredients. You can enjoy authentic coconut ladoos in a jiffy without any hassle. They are so fuss-free, quick and easy that I even sometimes make them in the evenings whenever dessert cravings strike in. But if you want to go a step forward like me, then opt for any or all of the flavorings I have shared in this recipe. Every flavour is unique in its own term.

INGREDIENTS

• Ghee – 1 Tablespoon
• Desiccated Coconut Powder – 2.5 Cups + 5 Tablespoon For Rolling
• Sweetened Condensed Milk – 1.5 Cup
• Cardamom Powder – 1 Teaspoon
• 10 Saffron Strands Soaked For 15 Mins In 1 Tablespoon Warm Milk
• Rose Syrup – 1 Tablespoon
• Rose water – 1/2 Teaspoon (Optional)

INSTRUCTIONS:

1. Heat 1 tablespoon ghee in a heavy bottomed pan.
2. Put desiccated coconut roast for 5 minutes at low heat.
3. Add the condensed milk and mix thoroughly utill all the coconut is coated well with condensed milk.
4. Add the cardamom powder and mix thoroughly.
5. Sauté until mixture becomes thick or till it starts to leave sides of pan.
6. Divide mixture into three portions.
Rose Coconut Ladoo:
1. Take one portion and add 1 tbsp rose syrup and 1/2 tsp rose water (optional).
2. Mix thoroughly and cook for 1 minute.
3. Transfer it to a bowl and let the mixture cool down for 5 minutes.
4. Grease your palms, take some mixture and make a round ball out of it.
5. Roll the ladoos in some desiccated coconut. (Repeat steps 3-4 to make remaining laddos.)
Saffron Coconut Ladoo:
1. Take one portion and add saffron soaked in warm milk.
2. Mix thoroughly and cook for 1 minute.
3. Transfer it to a bowl and let the mixture cool down for 5 minutes.
4. Grease your palms, take some mixture and make a round ball out of it.
5. Roll the ladoos in some desiccated coconut. (Repeat steps 3-4 to make remaining laddos.)
Cardamom Coconut Ladoo:
1. Take one portion and transfer it to a bowl.
2. Let the mixture cool down for 5 minutes.
3. Grease your palms, take some mixture and make a round ball out of it.
4. Roll the ladoos in some desiccated coconut. (Repeat steps 3-4 to make remaining laddos.)
