First, you need to blend the soaked almonds with milk until smooth. After that custard powder is mixed with cold milk and mixed until combined. Later milk is boiled with saffron strands until it thickens a bit.

Then it is flavored with cardamom and cooked along with almond paste for about 4-5 minutes. After that, sugar is added to sweeten it.

Lastly, add custard mixture to the boiling milk and cook until the milk has thickened and reaches a pouring and creamy consistency. Then it is flavored with rose water and enriched with chopped nuts.

After that, let the mixture cool down at room temperature and then chill in the refrigerator. Your badam milkshake is now ready to be served. You can garnish it with some chopped almonds or pistachios and serve it chilled.

1/4 cup of almond flour can also be used for making almond paste.

  • Milk: It is the second main ingredient of this recipe. It is the base of the badam milkshake and gives the milkshake a creamy taste and thick texture. Full fat milk tasted best here, but you can also use semi-skimmed milk.

Remember the low-fat milk will not give the same creamy texture as the full cream milk.

  • Sweetener: Sugar is added to the drink to sweeten this milkshake. It also balances out the nutty flavor of the almonds. The street style recipe uses white sugar so I have used white granulated sugar here. However, you can also use brown sugar, dates, or coconut sugar.

  • Flavorings: For flavoring I have used cardamom powder (a sweet-scenting spice) to add a subtle yet delightful flavor to this milkshake. I have also added saffron strands and rose water to provide a distinct floral flavor and aroma.

  • Vanilla custard powder: It is added to the badam shake to make it thicker and creamy. Adding vanilla flavored custard powder also adds delicate vanilla flavor that beautifully complements the nutty taste of the almonds.  

  • Chopped nuts: I have added a mix of chopped nuts (almonds, cashews, and pistachios) in the milkshake recipe for a delightful crunch and used it as garnish.

Badam milk shake is a flexible drink that can be easily customized to suit individual tastes and preferences. Here are some variations of the classic almond milkshake recipe:

Chocolate Badam Milkshake

To add a chocolate flavor to the classic almond milkshake, simply use corn flour instead of vanilla custard powder. Also, skip other flavorings (saffron, cardamom, and rose) and use cocoa powder or chocolate syrup to the recipe. The rest of the recipe will be the same.

Mango Badam Milkshake

To make a mango flavored badam milkshake, swap vanilla custard powder with mango flavored custard powder. Also, after cooling, add 1 cup mango pulp to the drink, or blend the milkshake with diced mangoes to give this drink a fruity flavor.

  1. Add soaked and peeled almonds to a bowl. Also, add 3/4 cup milk to the same bowl. Now transfer them to a blender and blend until smooth and creamy. Set aside. In a small bowl, mix together the vanilla custard powder and 1/4 cup of cold milk until well combined. Keep it aside for later use.

  3. In a wide pan, add the milk powder and stir it well. Heat for 2 minutes, then add crushed saffron strands and mix well. Bring the milk to a boil over high heat. Once boiling, reduce the heat to medium. Keep boiling and scrapping the sides of the pan with a spatula. You need to boil for about 4 minutes or until the milk thickens slightly.

NOTES:

  1. Almonds: You can also use almonds without peeling, but the milkshake will have a slightly gritty texture. So, to get a smoother and creamier milkshake I recommend peeling the almonds before using.
  2. Vegan: To make a vegan badam milkshake, swap milk with coconut or almond milk.
  3. Be sure not to overcook the mixture, or it will turn into a custard.
  4. Vanilla custard is used to thicken the milkshake, but you can also replace it with corn flour or arrowroot powder.
  5. For best results, serve the almond milkshake chilled.
  6. If your milkshake has thickened too much after cooling, then you can add a little milk to it and blend it again.
