Ingredients

You will need only 3 simple ingredients to make these chocolate pomegranate bites. These are:

  • Chocolate – It is the main ingredient of this recipe so use some good-quality chocolate. For this recipe, you can use both chopped bars or chocolate chips. I have used 70% dark chocolate, milk chocolate, and white chocolate.

You can use only dark chocolate or any other chocolate of your choice.

  • Pomegranate seeds – They are the second main ingredient. I used fresh pomegranate seeds (also known as arils). If you don’t want to spend time peeling pomegranates, then you can also use packaged pomegranate seeds to save time.

  • Coconut oil – It is used for adjusting the consistency of melted chocolate and for some flavor. If your chocolate is of pourable consistency then you can skip adding coconut oil.

How to Make Dark Chocolate Pomegranate Bites

Making these bites doesn’t take much time or effort. The only time taking part here would be peeling the pomegranate. They can be done in just 5 minutes if you have pre-peeled or packaged pomegranate seeds.

Here is how you can make chocolate pomegranate bites in just 3 steps:

Step 1 Melt Chocolate – Add chocolate to a microwave-safe bowl and microwave in 30-second intervals, until the chocolate is smooth. Add coconut oil and mix well.

Step 2 Assemble Chocolate Pomegranate Cups – Add liners to a muffin tin and spoon about 2 tablespoons of melted chocolate into each cup. After that, sprinkle a spoonful of pomegranate seeds over the melted chocolate. Then drizzled with some more melted chocolate.

Step 3 Chill to Set – Place the tin in the refrigerator to chill for about 15-20 minutes until the chocolate is set.

Topping suggestions

I didn’t top these bites with anything. If you want some topping ideas then here are some ideas for you:

  • Crackers/Cookies – Crushed crackers and cookies such as digestive, graham crackers, Biscoff cookies, and Oreos can also be sprinkled on top of these bites.

  • Nuts – You can top them with chopped nuts such as pistachios, almonds, peanuts, or walnuts, almonds.

  • Nut butter – A drizzle of nut butter can make them taste richer. You can use almond butter, peanut butter, or pistachio butter for drizzling.

  • Seeds – You can sprinkle some tasty seeds such as flaxseeds, chia, sunflower, or pumpkin seeds.

  • Dried fruit – You can sprinkle some dried berries such as raspberry, strawberry, cranberries, or blueberries.

Storage Suggestion

After the chocolate is set, you can store them in an airtight container in the refrigerator. They keep fresh for up to 5 days.

Serving Tips

These bites taste good when served at room temperature and also straight out of the fridge. Serve them alone or pair with Pomegranate Toast, chocolate covered kiwi.

But for some people, chocolate straight from the refrigerator is a bit hard, so if you find it hard, then you can keep them at room temperature for 15-20 minutes before eating to soften the chocolate a bit.

Expert Tips & Tricks to make the best Pomegranate Chocolate Bites

  1. Always use a microwave-safe bowl when melting chocolate in the microwave. I personally like to use a glass or ceramic bowl.

  2. Melting Chocolate – For melting chocolate, you can also use a double-boiler if you prefer.

  3. Chocolate – I have used a combination of high-quality dark, milk, and white chocolate. If you want to make healthy bites, then you can also use only dark chocolate.

  4. Toppings – I didn’t add any toppings to these pomegranate chocolate cups, but to make them look fancier or give them an additional texture, flavor, and taste, you can use dried berries, toasted almond flakes, coconut flakes, sea salt, or roasted pistachios.

  5. One large pomegranate will yield about 1 1/2 cups of arils. So you will need about 2 large pomegranates to get 3 cups of seeds.

  6. You can either use a muffin tin and paper muffin cups for this recipe or silicone muffin cups.

  7. **Freeze -  **These bites stay fresh in the refrigerator for about 5 days. If you want to store them for longer then you can freeze them for up to 3 months in the freezer. To freeze, wrap each bite in plastic wrap and then place them in a ziplock bag or in an airtight container and freeze.

  8. Chocolate - I’ve used three types of chocolate (dark, milk, and white) for making these cups. Feel free to use any of your favorite chocolates for making these cups, they would come out just perfect. You can also use candy melt for melted chocolate.
