» How to Make Pomegranate Chocolate Cups/Bites

  1. Melt the chocolates in small bowls in a double boiler or microwave on high for 1-2 minutes. When melting chocolate in microwave, stir after every 30 seconds to make sure it?s not burning. Add coconut oil to the melted chocolate and mix well until you get smooth and melted.744
  2. Line a mini muffin-tin with cupcake liners. In each cup, add about 3 teaspoons of melted chocolate. After that, top each cup with about 1 tablespoon pomegranate arils. Then, using a spoon, drizzle with more melted chocolate in a crisscross pattern over the pomegranate arils. At thi point, you can also sprinkle them with sea salt or coconut flakes.
  3. Refrigerate for about 15-20 minutes, or until chocolate sets. Pop them out of the tin, unwrap the chocolate cups. Arrange them on a platter and serve immediately. Keep them refrigerated until serving, these stay good for up to 5 days when stored in the fridge.

RECIPE NOTES

  1. Toppings - I didn't add any toppings to these pomegranate chocolate cups, but to make them look fancier or give them an additional texture, flavor, and taste, you can use dried berries, toasted almond flakes, coconut flakes, sea salt, or roasted pistachios.
  2. One large pomegranate will yield about 1 1/2 cups of arils. So you will need about 2 large pomegranates to get 3 cups of seeds.
