How This Recipe Came to Life

Every year around Diwali, my kitchen turns into a little sweet factory. There is always the sweet scenting aroma of saffron, cardamom, and ghee wafting through the house, the true scent of Indian celebration which my neighbors cannot resist. 

One evening before Diwali last, I wanted to make something quick yet festive for the Diwali party. Something that had the charm of authentic Indian mithai but looked like a modern royal dessert.

I found puff pastry sheets, some milk powder, and a box of soft dates in the pantry waiting to be used. That is when the idea struck, why not combine them all into a single, bite-sized fusion of dessert and make them a showstopper.

I combined a simple burfi filling with the flaky texture of puff pastry and the sweetness of dates, and the result was pure magic. Crisp, creamy, and rich with saffron and cardamom treats. My family loved it instantly and said it tasted like bakery-style mithai. It quickly became our go-to Diwali dessert recipe, perfect for gifting, parties, and festive sharing. 

Now it is one of my favorite DIY Diwali treats, and I am thrilled to share it with you so you can bring that same joy and sparkle to your festive dessert table.

Ingredients

For Burfi Stuffing

  • Milk Powder – It is the main ingredient for making a rich, homemade burfi base. If you are into the vegan version, use coconut flour or dairy-free milk powder.

  • Ghee – It is essential in any Indian dessert recipe, which is usually added for shine and richness to the filling.

  • Icing sugar – It is added for sweetness. Adding sweetener is totally optional here, so if you want to make it without a sweetener, you can omit it. 

  • Flavoring: To flavor this sweet with a classic mithai aroma, I have used a combination of cardamom powder and saffron strands. You can also use other flavorings like rose or kewra extract, or pinch of nutmeg.

  • Nuts: I used a mix of chopped nuts like almonds, cashews, and pistachios.

  • Milk – It is used as a liquid to give it a smooth, pipeable consistency.

  • Garnishing – I have garnished these bites with the burfi mixture, chopped nuts, dried rose petals, and edible silver or gold leaf to a festive premium dessert touch.

For Date Bites

  • Puff pastry sheets – Thawed frozen puff pastry shells are used for rolling the stuffed dates to give it that crisp, flaky shell.

  • Dates – You can use either soft or Medjool dates which are naturally sweet and chewy.

  • Milk – For brushing the pastry sheets, I used milk to help them achieve a golden crust. You can also use melted butter for brushing.

How to Make 

Making these khajur stuffed burfi rolls is remarkably simple. Just make the Burfi Filling by combining milk powder, ghee, icing sugar, saffron, cardamom, and nuts. 

Gradually add milk until smooth and thick. The mixture should be creamy and of pipeable consistency. Transfer it to a piping bag and set it aside. This is your quick milk powder burfi recipe base which does not require any mawa!

Next, fill the dates by removing the pit and piping 1–2 teaspoons of the burfi filling inside. 

Then cut the puff pastry sheets into 1-inch strips. Wrap each stuffed date tightly with one strip and seal the ends. It gives you that signature puff pastry sweets texture when baked.

Brush them with milk and bake them in a preheated oven for 15–20 minutes, until puffed and golden.

Cool for 10–15 minutes. Top with leftover burfi mixture. Garnish with crushed nuts, rose petals, and edible gold leaf for a royal finish. Serve warm or at room temperature and enjoy! 

Variations

Rose flavored filling

For a floral twist, add a splash of rose water, rose syrup, or rose extract to the mawa filling. 

Cocoa Filling

Simply replace saffron and cardamom with cocoa powder for chocolatey fusion cooking ideas. 

Other Nuts

Feel free to try different nuts like pecans or hazelnuts or walnuts for a different flavor.

Indian Sweet Filling

Instead of using burfi filling you can use pre-made or store-bought crushed sweets like motichoor ladoo, rose kaju katli,  rose badam ladoo, walnut halwa, badam burfi, or carrot halwa for filling for a super quick dessert recipe.

To store, place them in an airtight box lined with parchment paper, and store them for up to 3 days at room temperature.

For a longer shelf life, you can also refrigerate them for up to 1 week. 

When you want to eat, reheat them in the oven for 2–3 minutes before serving to restore freshness and crispness.

These bites make an ultimate make-ahead festive sweet as they stay fresh and flaky for 3 days. 

Tips & Tricks to make the best Royal Burfi Date Puff Bites

  1. Puff Pastry: Keep puff pastry cold until baking for maximum flakiness. If the pastry gets too soft, pop it back in the fridge for a few minutes. 

  2. Filling: Don’t overfill the dates; a little burfi mixture is just enough.

  3. Dates: If your dates are a little sticky or too soft, chill them in the fridge for 10 minutes before filling. This makes them firmer and easier to work with.

  4. Nuts: Top the filled dates with crushed nuts if desired.

  5. Sweetener: For a healthier twist, you can also use swap sugar with jaggery powder, coconut sugar, or palm sugar.

  6. Brushing: For extra shine, you can brush with milk twice before mid-bake. You can also use melted butter for brushing.

  7. Garnishing: I used edible silver to give it a royal finish. You can also use edible gold leaf for garnishing.

  8. Serving: If you are serving them for a party, arrange each puff bite in a mini cupcake liner. It looks stunning and makes it easy to pick up and serve.
