RECIPE INGREDIENTS
» For Burfi Stuffing
- 1/2 cup milk powder
- 1 tablespoon ghee
- 2 tablespoons icing sugar
- 1/4 teaspoon cardamom powder
- 5-6 saffron strands
- 1 tablespoon chopped almonds
- 1 tablespoon chopped cashews
- 1 tablespoon chopped pistachios
- 2-3 tablespoons milk, or as needed
» For Date Bites
- Frozen puff pastry sheets, thawed
- 20 soft dates or Medjool dates
- Milk, for brushing
» For Garnish
- Remaining burfi mixture
- Chopped nuts
- Dried rose petals
- Edible silver or gold leaves
RECIPE INSTRUCTIONS
» Make the Burfi Filling
- In a small bowl, combine milk powder, ghee, icing sugar, saffron strands, cardamom powder, and chopped nuts. Mix well.
- Gradually add milk and stir until you get a smooth, pipeable, frosting-like consistency. Transfer the mixture to a piping bag and set it aside.
» Fill the Dates
- If using pitted dates, simply make a small slit in each one. If not, make a slit and remove the pit carefully. Pipe 1-2 teaspoons of the prepared burfi filling into each cavity. Repeat until all the dates are filled. Set them aside, and reserve the remaining burfi mixture for garnishing later.
» Shape the Rolls
- Place one puff pastry sheet on a rolling surface and cut it into 4-5 long, ribbon-like strips. Repeat with the remaining sheets, ensuring the strips are of even width. Take one burfi-stuffed date and roll a puff pastry strip tightly around it, sealing the ends. Repeat the process for all the dates. The date bites are now ready to bake.
» Baking
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper. Place the date bites on the prepared sheet and brush them with milk or melted butter for a golden, glossy crust. Bake for 15-20 minutes, or until the rolls are puffed up and golden brown.

- Once baked, remove them from the oven and let them cool for 15-20 minutes. Top each baked date roll with a little burfi mixture and garnish with chopped nuts, dried rose petals, and edible silver leaves.
