Ingredients

For making this Asian vegetable noodle soup, you will need some handy ingredients.

  • Noodles: It is the star ingredient of this soup recipe. I have used rice noodles here because I wanted to prepare this Asian gluten-free noodle soup. Feel free to use any other noodles of your choice.

  • Liquid: You will need some boiling water or boiling broth for making noodles.

  • Veggies: Here you can use any vegetables according to your taste preference. I have only used chopped cabbage and chopped carrots here.

  • Ginger Garlic: They both add a pungent flavor and earthy note and a distinct taste to this noodle dish. Using freshly minced, grated, or chopped ginger and garlic is highly recommended for the best flavor and taste.

  • Spring onions: It is one of the main ingredients in Asian dishes. They don’t only taste good, but also add a beautiful green color to the soup. So if possible, don’t skip it.

  • Herbs: I have also used freshly chopped cilantro for a herby touch, color, and refreshing flavor.

  • Oil: Hot oil is added to the base sauce. You can use sesame oil or any neutral oil of your choice. Sesame oil is advised to use here, as it enhances the broth with its rich flavor.

  • Vinegar & Soy Sauce: Rice vinegar or white wine vinegar for acidity, and soy sauce for umami flavors.

  • Other Ingredients: To season this soup, I have added red pepper flakes. If you don’t like hot soup, then feel free to replace it with freshly ground black pepper.

Tips and Tricks to Make the Best Asian Noodle Soup

  1. Noodles: For this Chinese Noodle Soup recipe, I have used rice noodles for making this noodle soup recipe. But you can also use any other noodles such as egg noodles, udon, ramen, chow mein noodles, soba noodles, or any other noodles of your choice. Just remember to cook the different noodles according to their package instructions.

  2. Cooking liquid: For cooking noodles, I have used boiling water, but you can also use vegetable broth or chicken broth here. Go for low sodium broth to avoid an overly salty soup. You can also use authentic Asian soup broth.

  3. Protein: For added protein you can use grilled chicken, shrimp, or any other meat. For a vegan version, use tofu as a protein source.

  4. Healthier Noodle Options: For a low calorie and carb option, you can skip regular noodles with zoodles or carrot fettuccine for this soup recipe.

  5. Veggies: I have used only cabbage and carrots in this soup recipe. You can add more vegetables like mushroom, broccoli, and edamame for a filling and nutritious Asian vegetable soup.

  6. Salt: I didn’t add any salt because the soy sauce I have used is salty enough, so feel free to add salt if required.

  7. Sweeter: If you like sweet, spicy, and sour flavors, then you can also use a small amount of sweetener to balance the flavors.

  8. Balance the Flavors: Feel free to balance the salty, sour, spicy flavors by adjusting ingredients like soy sauce, vinegar, red chili flakes, and chili oil to suit your taste.

  9. Use Fresh Herbs: For the best flavor and color contrast use fresh herbs like cilantro.
