  • Peaches: They are the star of this recipe, so choose good quality fresh, sweet, and juicy peaches. You can also use nectarines here.

  • Greens: For Italian flavors, I have used a combination of fresh basil leaves and sliced mint leaves. With their herby freshness and peppery taste, they both go so well with peaches and give this salad a cool, refreshing kick. You can also use other greens such as fresh spinach leaves or fresh arugula.

  • Red Bell Pepper: Some diced red peppers are added for a crisp and sweet bite.

  • Red Onion: Thinly sliced onions bring a sharp flavor that gives a pungency and contrasts with the peaches.

  • Goat Cheese Crumbled: The addition of cheese makes the salad creamy and tangy. You can also use crumbled feta or salad cheese here.

Making peach salad is very simple. Prep peaches and veggies. Make the dressing by shaking extra virgin olive oil, balsamic vinegar, lemon juice, Dijon mustard, salt, and pepper in a small glass jar until well combined.
