  • Milk: It is the base for this Korean shaved ice recipe. When milk is frozen and shaved, it makes a creamy and fluffy texture that is very different from regular water-based shaved ice. Whole milk works best for a rich and creamy texture, but 2% milk can also be used here.

  • Sweetened Condensed Milk: It is used to sweeten the milk. It not only adds sweetness, but it also adds richness to the milk ice and the creamy flavor that’s characteristic of Korean café-style bingsu. It is also used to drizzle on the final dessert for a classic finish and to make it taste more divine.

  • Ripe Mangoes: Since mangoes are the star ingredient of this recipe, choose ripe, sweet, and juicy mangoes for the best flavor. Some of the mangoes are blended into a smooth puree while the rest are diced into chunks for serving. Alphonso, Ataulfo, Honey, Kent, and Keitt mangoes all work wonderfully well in this mango bingsu recipe.

  • Vanilla Ice Cream: I used homemade vanilla ice cream as a sweet topping, but you can also use store-bought vanilla ice cream.. It slowly melts into the fluffy shaved milk ice, which makes this mango dessert even creamier and more indulgent.

How to Make Mango Bingsu

Making Mango Bingsu at home is very quick, simple, and easy.

  • To make frozen milk, add the milk to a freezer-safe container along with sweetened condensed milk. Stir until well mixed.
  • Cover the container and freeze for 6 to 8 hours or until completely solid. You can also freeze it overnight.
  • For faster shaving, you can also freeze the mixture in ice cube trays and then blend it in a food processor.
  • Then, peel and dice the mangoes into small cubes. Now, reserve about half of the mango cubes for topping and transfer the remaining mangoes to a blender and blend until smooth. If needed, add 1 to 2 teaspoons of water to help the mixture blend. If your mangoes are not very sweet, you can add a little sweetener of your choice. Your mango puree is ready, keep it aside. Once frozen, remove the frozen milk mixture from the freezer. Using a fork, gently scrape the surface to create fluffy shaved ice.
  • Alternatively, you can use an ice shaver, food processor, or even a blender. You can also * crush the milk ice. All the methods work great. The goal is to give the frozen milk a light, * snow-like texture.
  • Now, it’s time to assemble the Bingsu. Divide the shaved milk ice between serving bowls. Top * generously with chopped mangoes. Then drizzle with sweetened condensed milk and mango puree.
  • Finally, top it with a scoop of vanilla ice cream. Your delicious mango bingsu is ready. Serve immediately and enjoy.
