RECIPE INGREDIENTS
» For the Milk Ice
- 500 g milk
- 2 tablespoons sweetened condensed milk
» For the Mango Topping
- 2 ripe mangoes
» For Serving
- Sweetened condensed milk, for drizzling, for drizzling
- Chopped mangoes
- Mango puree
- Vanilla ice cream
RECIPE INSTRUCTIONS
» Make the Milk Ice
- In a freezer-safe container or bowl, mix together the milk and sweetened condensed milk until fully combined. Cover with a lid and freeze for 6-8 hours or until completely solid.
» Prepare the Mangoes
- Dice the two mangoes into small cubes and reserve half of the mango chunks.
- Blend the rest of the mangoes until smooth to make a puree. If needed, you can add 1-2 teaspoons of water to help it blend. For a sweeter puree, you can also add a little sweetener of your choice. My mangoes were sweet, so I didn't add any additional sweetener.
» Shave the Frozen Milk
- Remove the frozen milk mixture from the freezer. Using a fork, shave the frozen milk. Alternatively, you can also use an ice machine or a food processor. You can also crush the frozen milk into fine, fluffy ice.
» Assemble the Mango Bingsu
- Divide the shaved milk ice between serving bowls. Add a generous amount of chopped mangoes. Drizzle with sweetened condensed milk and mango puree. Add a scoop of vanilla ice cream on top. Serve immediately while the ice is light and fluffy.
RECIPE NOTES
- Use very ripe, sweet mangoes for the best flavor.
- Freezing the milk mixture in ice cube trays makes it easier to process.
- For extra richness, drizzle additional condensed milk just before serving.
- Serve immediately after assembling, as the shaved ice melts quickly.
