RECIPE INSTRUCTIONS

» Make the Milk Ice

  1. In a freezer-safe container or bowl, mix together the milk and sweetened condensed milk until fully combined. Cover with a lid and freeze for 6-8 hours or until completely solid.

» Prepare the Mangoes

  1. Dice the two mangoes into small cubes and reserve half of the mango chunks.
  2. Blend the rest of the mangoes until smooth to make a puree. If needed, you can add 1-2 teaspoons of water to help it blend. For a sweeter puree, you can also add a little sweetener of your choice. My mangoes were sweet, so I didn't add any additional sweetener.

» Shave the Frozen Milk

  1. Remove the frozen milk mixture from the freezer. Using a fork, shave the frozen milk. Alternatively, you can also use an ice machine or a food processor. You can also crush the frozen milk into fine, fluffy ice.

» Assemble the Mango Bingsu

  1. Divide the shaved milk ice between serving bowls. Add a generous amount of chopped mangoes. Drizzle with sweetened condensed milk and mango puree. Add a scoop of vanilla ice cream on top. Serve immediately while the ice is light and fluffy.

RECIPE NOTES

  1. Use very ripe, sweet mangoes for the best flavor.
  2. Freezing the milk mixture in ice cube trays makes it easier to process.
  3. For extra richness, drizzle additional condensed milk just before serving.
  4. Serve immediately after assembling, as the shaved ice melts quickly.
