  1. Preheat your oven to 375°F (190°C). Grease a 9x11-inch baking dish or line it with parchment paper. Hull and slice strawberries lengthwise. Also, peel and slice 1 banana. Keep them aside for later use.
  2. Mix dry ingredients: In a medium mixing bowl, combine the rolled oats, salt, baking powder, and ground cinnamon. Stir until well combined.
  3. Whisk wet ingredients: In a large bowl, mash 1 large banana using a fork ot a potato masher. Add 1 large egg, coconut oil, maple syrup, and vanilla extract to the bowl. Whisk well until combined. Next, add milk and whisk.
  4. Add chia seeds and mix. Pour the dry mixture into the bowl with the wet ingredients. Also, add 1 3/4 cups of sliced strawberries and stir until all the ingredients are evenly incorporated, forming a thick batter. Transfer the oatmeal mixture to the prepared baking dish, spreading it out evenly.
  5. Top with remaining strawberry slices, sliced bananas, chocolate chips, and sliced almonds. Bake in the preheated oven for 30-35 minutes or until the top is golden, the edges are set and the center is slightly firm.
  6. Once baked, remove the dish from the oven and let it cool for 7-8 minutes on a cooling rack before serving. This resting time will give you nice squares. Alternatively, you can serve immediately bowl style. Serve warm slices of the Strawberry Baked Oatmeal with a dollop of Greek yogurt, cream, a drizzle of maple syrup, or a sprinkling of extra chocolate chips, if desired.   2. If you want to make it for the entire week, then you can easily double the recipe.
  3. To make gluten-free baked oats, use gluten-free oats, and also use vegan milk alternatives.
  4. If you like crunchier texture then toast the rolled oats for a few minutes before adding them to the mixture.
