RECIPE INSTRUCTIONS

» Making Carrot Brownies:

  1. Preheat oven to 300°/150C. Line 8x4 inch pan and spray with non-stick cooking spray.
  2. Place butter in a microwave safe bowl and heat in microwave until 2/3rd of the way melted, for about 25 seconds
  3. Mix in sugar, stirring until butter is fully melted, then add egg and vanilla extract. Mix well.
  4. Add flour and cocoa powder and mix just until combined.
  5. Stir in grated carrots, and cinnamon. Pour into prepared pan and bake 20-25 minutes.
  6. Allow the brownies to cool before frosting.
  7. Allow the brownies to set at least one 30 minutes in the fridge before cutting.

» For Serving:

  1. Drizzle vanilla custard right over the brownies.
  2. Top brownie with a dollop of vanilla ice-cream and drizzle some caramel sauce. Enjoy with a glass of milk or coffee!

RECIPE NOTES

  1. You can replace butter with oil or baking margarine. Make sure to add 1/4 tespoon of salt if using oil or baking margarine
