» How To Make Rose Churma (Gulab Choorma) Dough:

  1. Add 1 cup rose petals and water to a pan and boil it for 5 minutes.
  2. When the petals turn white add milk to this mixture.
  3. Let it boil for 5 minutes. Once boiled, remove it from the heat and let it cool down.
  4. Add the whole wheat flour, semolina and 5 tablespoons melted ghee to a deep bowl and mix well.
  5. Add 1/4 cup dried rose petals.
  6. Strain rose mixture and add little by little it to the flour.
  7. Knead to make a stiff dough.
  8. Divide the dough into 5-6 equal small balls and shape them into patties.

» Baking In A Pan/Tawa:

  1. Add 2 cups of salt to a pan and put a stand on it.
  2. Arrange a plate on it.
  3. Cover it, and let it preheat for 10 minutes on high heat.
  4. Arrange patties on the plate.
  5. Cover with the lid, and let them bake on medium-low heat for 20 minutes.
  6. Flip the patties and bake them again for 20 minutes.

» Baking In an Oven:

  1. Preheat oven to 175°C/ 350°F. Arrange patties on a baking tray.
  2. Bake for 30-40 minutes or until the top turn golden brown.

» Making Churma:

  1. Break the hot patties and place them into a mixer jar.
  2. Grind them in a blender into a fine powder.
  3. Pass it through the sieve to get a fine mixture. Grind the solid pieces again and pass it through the sieve again. You may need to follow this step a couple of times to get the perfect texture.
  4. Add cardamom powder and powdered sugar, saffron soaked milk, and 5 tablespoons ghee, and pink food color.
  5. Mix well until combined.
  6. Now, add rose water, almonds, cashews, pistachios, and crumbled mawa.
  7. Mix well to combine.
  8. Transfer it to a serving plate, and garnish with nuts and dried rose petals, and serve.
  9. Serve Gulab Churma with Dal, and Bati, or as an after-meal dessert.

RECIPE NOTES

  1. To make churma laddos, shape them into balls while the mixture is hot. (You can also microwave this mixture for 30 seconds).
