  1. In a bowl, mix chilled Greek yogurt with maple syrup or honey. Adjust the sweetness according to your preference. Add the pomegranate seeds and mix well.
  2. Place small dollops of the sweetened Greek yogurt onto a parchment paper-lined tray. Freeze the yogurt and pomegranate bites for at least 2 hours or until they are firm. In a heatproof bowl, melt the dark chocolate with coconut oil using a double boiler or in the microwave, stirring until smooth.
  3. Take the frozen yogurt and pomegranate bites out of the freezer. Using a spoon/fork or toothpick, dip each frozen bite into the melted chocolate, coating it evenly. Allow any excess chocolate to drip off. Place the coated bites back on the parchment paper-lined tray and return them to the freezer for another 30 minutes or until the chocolate hardens. Once the chocolate is set, transfer the bites to an airtight container and keep them in the freezer until ready to serve.
