RECIPE INSTRUCTIONS

» Making Stuffing //

  1. Heat oil in a pan. Add chopped garlic and saute for 1 minute.
  2. Add mushroom and saute for one minute.
  3. Now add kale and saute for 1 minute.
  4. Add salt, turmeric powder and saute for 2 minutes.
  5. Add coriander powder, dried mango powder, garam masala powder, red chili powder and mix well.
  6. Saute for 1 minute, then add potatoes while crumbling them roughly.
  7. Mix and mash potatoes well with the help of a spatula.
  8. Now add gram flour and mix well. Cook for 2 minutes or till the stuffing dries completely.
  9. Lastly add raisins and mix well.
  10. Once cooked, remove the stuffing from the heat and let it cool completely.

» Making Dough //

  1. Add wheat flour, salt to a mixing bowl.
  2. Add enough water to make a soft and smooth dough.
  3. Apply little oil to the dough and knead well.
  4. Cover with a muslin cloth and set aside for 15 minutes.
  5. Divide the prepared stuffing into 8 equal sized balls and keep aside.

» Making Paratha //

  1. Spread some dry flour on a rolled ball.
  2. Roll out one dough ball into a circle of 4? diameter.
  3. Brush little oil, and place 2 tablespoons mixture in the center of the dough circle.
  4. Bring together all the sides in the center and seal tightly.
  5. Press lightly to seal the edges well.
  6. Roll out again into a circle of 6? diameter with the help of some flour.
  7. Heat a pan. Roast rolled circles from both sides.
  8. Apply a little oil on both sides. Roast until golden brown from both sides.
  9. Repeat with the remaining dough and filling to make more parathas.
  10. Serve mushroom kale stuffed paratha hot with your favorite pickle and raita.
