RECIPE INSTRUCTIONS

» How to Make Lehsuni Dum Aloo:

  1. Heat a pan and dry roast dried red chilies and coriander seeds.
  2. Let them cool down a bit and transfer them to a blender jar.
  3. Also add tomatoes and garlic cloves, and blend to make a smooth paste.
  4. Keep the paste aside.
  5. Heat oil in a nonstick saucepan.
  6. Add potatoes and shallow fry them on medium heat till they turn golden in color.
  7. Once they are golden, transfer them to a plate and set aside.
  8. In the same oil, add cumin seeds.
  9. As cumin seeds start to crackle, add Kasuri methi and sauté for 30 seconds.
  10. Add the prepared tomato garlic paste and stir it well. Let it cook for 2 minutes.
  11. Add turmeric powder, Kashmiri red chili powder, salt and mix well.
  12. Now add shallow fried potatoes and mix gently.
  13. Reduce the heat to medium-low and add 1/4 cup of water.
  14. Cover and cook for about 7-8 minutes. Keep checking it occasionally to make sure it doesn?t stick to the bottom. Add more water, if needed.
  15. Open the lid, and garnish curry with coriander leaves.
  16. Transfer lehsuni dum aloo curry to a plate and serve hot with paratha, naan, or rice.
