RECIPE INSTRUCTIONS

» How to make Egg Curry:

  1. Heat oil in a pan over medium heat.
  2. Add cumin seeds to it and let them crackle for a few minutes.
  3. When the seeds start to splutter, add chopped onions and chopped green chilies.
  4. Sauté for 2 minutes and add turmeric powder.
  5. Mix well and sauté for 2 minutes.
  6. Add ginger-garlic paste, and mix well. Cook for 2 minutes.
  7. Next, add salt, chili powder, coriander powder, and garam masala powder.
  8. Mix well and cook for 1 minute.
  9. Add tomato puree, mix well and cook for a minute.
  10. Add water and mix well.
  11. Cook covered for 5-7 minutes. Stir occasionally.
  12. Next, add boiled eggs and coriander leaves.
  13. Mix well until combined.
  14. Cover the pan with a lid, and cook it for about 2-3 minutes.
  15. Add cream and mix well.
  16. Cook for 2 more minutes.
  17. Remove from heat and serve egg curry hot with naan or pulao.

RECIPE NOTES

  1. You can also use crushed tomatoes or freshly made tomato pulp instead of tomato puree.
