RECIPE INGREDIENTS
» For Coconut Ladoo Truffles
- 300 g sweetened condensed milk
- 1½ cups desiccated coconut, plus up to ¼ cup more if needed
- 2 teaspoons ghee
- ½ teaspoon ground cardamom
» Pistachio powder
- ½ cup shelled, roasted pistachios
» White chocolate pistachio filling
- 100 g white chocolate, finely chopped
- 2 tablespoons cream (I used 10% fat cream)
- 2 tablespoons pistachio powder
- 2 tablespoons of sliced pistachios
- 1 teaspoon crushed dried rose petals
» Coating and garnish
- ? cup desiccated coconut
- Remaining pistachio powder, enough to coat approximately 4 truffles
- Edible silver or gold leaf (optional)
- 1 teaspoon dried rose petals (optional)
- 2 teaspoons of sliced pistachios (optional)
RECIPE INSTRUCTIONS
» Prepare the Filling and Coconut Mixture
- Add the cream and chopped white chocolate to a microwave-safe bowl and microwave for 30 seconds. Stir until smooth.
- Microwave for another 20 seconds if the chocolate has not melted completely. Alternatively, heat the cream until steaming, pour it over the white chocolate, let it rest for 1 minute, and mix well until smooth. Chill the filling for about 30 minutes, or until it thickens enough to pipe.
- Add the condensed milk to a non-stick pan over medium-low heat and cook for 1 minute, stirring, until it loosens. Then add 1½ cups of desiccated coconut. Stir continuously and cook until the mixture slightly thickens.
- Add the ghee, and ground cardamom and continue cooking, stirring continuously, until the mixture gathers into a soft mass. Add extra coconut only if the mixture remains too sticky to handle. Let it cool until comfortable to handle but still pliable.
- Add the roasted pistachios to a blender and pulse until they form a coarse powder. Avoid blending for too long, as the pistachios can release their oils and turn into a paste.
- Transfer the pistachio powder to a bowl for coating. Measure out 2 tablespoons of pistachio powder for the filling and reserve the remaining powder for coating.
- Once the filling has chilled, remove it from the refrigerator and add 2 tablespoons of pistachio powder. Mix well, then stir in the crushed dried rose petals and sliced pistachios. Transfer the filling to a piping bag and set aside.
» Assemble the Coconut Ladoo Truffles
- Scoop a portion of the coconut mixture, shape it into a ball, and flatten it in your palm. Pipe some of the white chocolate pistachio filling into the centre and add 2-3 sliced pistachios. Wrap the coconut mixture around the filling, seal completely, and roll gently into a ball. Repeat with the remaining mixture. This recipe makes approximately 9 large truffles or 15 small truffles, depending on the size.
- Roll approximately half of the truffles in desiccated coconut and the other half in pistachio powder. You can also coat these Coconut Ladoo Truffles in melted white chocolate or white chocolate mixed with chopped pistachios and dried rose petals. See the Recipe Notes below for details.
- Garnish with dried rose petals, sliced pistachios, and edible silver or gold leaf, if desired. Refrigerate until firm. When serving, let the truffles soften slightly at room temperature.
RECIPE NOTES
- I used 10% fat cream. You can also use heavy cream or whipping cream for a richer filling. The consistency may vary depending on the cream, so chill the filling until it is thick enough to pipe.
- For another topping, dip the chilled truffles in melted white chocolate. Place them on parchment paper and let the coating set.
- Add extra desiccated coconut gradually, only if needed. Too much coconut can make the shell dry and difficult to wrap around the filling.
- Store the truffles in an airtight container in the refrigerator for up to 7 days. Since the filling contains cream, keep them refrigerated between servings.
