  1. Preheat the oven to 400°F/200°C. Line a baking sheet with parchment paper. Roll the pastry into a 14-by-12-inch rectangle.
  2. Transfer the pastry dough to the prepared baking sheet.
  3. Cut diagonal slits 1 inch apart from the 2 sides of the pastry rectangle.
  4. In a small bowl, combine cream cheese and strawberry jam. Mix until well combined.
  5. Spread the cream cheese mixture lengthwise down the center of the pastry.
  6. Top with fresh strawberries. Add some more mixture and strawberries.
  7. Fold the top and bottom parts of the sheet as shown in the video.
  8. To braid; Start at one end and fold the pastry strips over the strawberries on diagonal, alternating sides until the whole sheet is braided.
  9. Brush the pastry with the egg wash.
  10. Sprinkle with the pearl sugar and top. Bake for 25-30 minutes or until golden brown.
  11. Let cool on completely on a wire rack before serving.
  12. Enjoy with a cup of coffee.
