RECIPE INSTRUCTIONS

» Make Blueberry Compote

  1. Heat 1 cup of blueberries, honey/sugar, lemon zest, lemon juice, and 1 teaspoon of olive oil or water in a small saucepan over medium heat and stir well to combine.
  2. Bring to a boil, and then turn the heat to medium-low. Simmer it until blueberries start to burst. Keep stirring and slightly mashing the blueberries to release their juices. Once they are bubbly, syrupy, and slightly thickened, remove the compote from the heat and transfer it a bowl. Set it aside to cool.

» Toast bread

  1. Heat a skillet over medium-high heat. Once the pan is hot, spray/drizzle olive oil, or spread butter on a skillet. Place bread slices on it, and drizzle the top with more olive oil. Toast the bread slices from both sides until they are crunchy, crisp, and golden brown. The toast should be sturdy enough to hold the toppings. Transfer the toasted bread slices to a cooling rack and let them cool completely before adding toppings. This step would prevent toasted bread slices from turning soggy. Alternatively, you can also toast the bread slices in the toaster to your preferred level.

» Assemble Toast

  1. To assemble toasts, spread about 2 tablespoons of softened cream cheese on each slice of bread. Top each piece with 1-2 tablespoons blueberry compote. Sprinkle with lemon zest, and chia seeds and serve immediately.

RECIPE NOTES

  1. Honey - If you prefer sweeter toast, you can also drizzle each toast with honey for added sweetness right before serving.
  2. Herbs - You can also sprinkle toast with fresh herbs like mint, basil, rosemary, or thyme.
  3. Spices - You can dust toast with powdered cinnamon.
