» Making Bhindi Aloo Tofu Masala:

  1. Heat 1 tablespoon oil in a pan. Add tofu triangles and roast from both sides, till they turn slightly brown in color.
  2. Remove from pan, and set aside.
  3. Now add 1 tablespoon oil and add sliced potatoes to it, and roast from both sides, till they turn golden brown.
  4. Remove from pan, and keep aside for later use.
  5. Heat 1 1/2 tablespoons oil in the same pan. Add asafetida, cumin seeds, and carom seeds.
  6. Let them splutter. Add onions, and sauté them for 2-3 minutes.
  7. Now add okra, turmeric powder, and salt.
  8. Let them cook covered for 7-8 minutes or till okra is soft.
  9. Stir occasionally to prevent from burning.
  10. Now add roasted tofu, roasted potato slices, coriander powder, red chili powder, garam masala powder, and mix well.
  11. Cook for 4-5 minutes, and remove from heat.
  12. Squeeze some lemon juice and mix well.
  13. Serve hot with any of your favorite flatbread or pulao.
