RECIPE INSTRUCTIONS

» How to Make Gingerbread Truffles //

  1. Use a grinder or food processor to process your cookies until they become very fine crumbs. Alternatively, put cookies in a resealable plastic bag and smash with a rolling pin until they are crumbs.
  2. Add in butter and vanilla sugar and process again until well-blended.
  3. The dough should be moist enough to hold together when you press it into a ball.
  4. Transfer mixture into a plate.
  5. Then roll cookie mixture into 1 inch balls using a cookie scoop, melon baller or hands.
  6. It makes about 14 1-­inch balls. I used my hands for shaping them into balls to make them completely round. Place onto a plate wax paper lined plate and refrigerate for 15 minutes.
  7. Melt chocolate in a microwave on for 2-3 minutes stirring after each minute until smooth. Alternatively, melt white chocolate slowly in a double boiler.
  8. Dip lower half of each truffle into chocolate mixture; allow excess to drip back into the bowl. You can also coat them in chocolate fully.
  9. Place the coated truffles onto a plate or a cookie sheet.
  10. Immediately top with sprinkles. Repeat with remaining cookie balls.
  11. Allow truffles to rest refrigerate for 15 minutes, or until the chocolate has set. Enjoy.

RECIPE NOTES

  1. You can also add a pinch of nutmeg or cinnamon for extra flavors.
  2. Vanilla sugar can be replaced with Powdered sugar. If you are planning to omit vanilla sugar, then add some vanilla or almond extract.
  3. You can easily double or triple this recipe if you are planning to gift these truffles to your friends, co-workers, or neighbors during the holiday season.
