» Roast Tomatoes

  1. Preheat the oven to 450°F/ 200°C. In a baking dish, combine the tomatoes, minced garlic, oregano, chili flakes, salt, ground black pepper, and olive oil. Give it a mix. Add basil leaves, and drizzle with balsamix vinegar and mix again. Bake for 15-20 minutes, or until the tomatoes begin to burst and the oil is sizzling.

  1. Combine feta cheese, cream cheese, lemon zest, honey, lemon juice, and olive oil in a food processor.
  2. Pulse until smooth and creamy. Add the milk or water to make it spreadable and pulse again. your delicious honey whipped feta is ready. The feta dip can be kept in the fridge for up to 3 days.

» Serve Whipped Feta Dip With Roasted Tomatoes

  1. Spoon the feta dip into a serving bowl and then top with the warm roasted tomatoes with their juice. Top with fresh basil leaves and and sprinkle toasted almonds. Serve with bread, crackers, veggies of your choice.

RECIPE NOTES

  1. If you prefer milder dip, then feel free to skip red pepper flakes.
  2. Instead of roasted tomatoes, you can also top this dip with just chili oil and nuts. Or tip it with olives, or marinated tomatoes.
