» Make the Whipped Cottage Cheese Base

  1. Add the cottage cheese, garlic cloves, feta, lemon zest, lemon juice, honey, olive oil, black pepper, and oregano to a blender.
  2. Blend until completely smooth, thick, and creamy. Scrape down the sides if needed, and blend again until no graininess remains.

» Prepare the Fresh Salad Topping

  1. Quarter the cherry tomatoes, dice the cucumber, thinly slice the red onion, and chop the cilantro.
  2. In a mixing bowl, combine the tomatoes, cucumber, red onion, and cilantro.
  3. Add the lemon juice, minced garlic, red pepper flakes, and salt.
  4. Mix well until everything is evenly coated. Let the mixture rest for 5-10 minutes to allow the flavors to develop and the tomatoes to release a little juice.

» Toast the Baguette

  1. Slice the baguette diagonally and lightly brush each slice with olive oil.
  2. Toast in a pan over medium heat until golden and crisp on both sides.

» Assemble and Serve

  1. Spoon the whipped dip onto a shallow serving plate or bowl and spread it into an even layer using the back of a spoon.
