RECIPE INGREDIENTS
» For the Whipped Cottage Cheese Dip
- 1 cup cottage cheese
- 125 grams feta cheese (about ½ block)
- 2 garlic cloves
- 1 teaspoon dried oregano
- 1 teaspoon ground black pepper
- 1 teaspoon lemon zest
- Juice of ½ lemon
- 1 tablespoon honey
- 1-2 tablespoons olive oil
» For the Fresh Salad Topping
- 250 grams cherry tomatoes, quartered
- ½ cucumber, diced
- 1 small red onion, thinly sliced
- A handful of fresh cilantro, chopped
- Juice of ½ lemon
- 2 garlic cloves, minced
- ¼ teaspoon red pepper flakes
- Salt, to taste
» For Serving
- 1 baguette, sliced diagonally
- Olive oil, for toasting
- Chili oil, for drizzling
- Chopped toasted pistachios, for garnish
RECIPE INSTRUCTIONS
» Make the Whipped Cottage Cheese Base
- Add the cottage cheese, garlic cloves, feta, lemon zest, lemon juice, honey, olive oil, black pepper, and oregano to a blender.
- Blend until completely smooth, thick, and creamy. Scrape down the sides if needed, and blend again until no graininess remains.
» Prepare the Fresh Salad Topping
- Quarter the cherry tomatoes, dice the cucumber, thinly slice the red onion, and chop the cilantro.
- In a mixing bowl, combine the tomatoes, cucumber, red onion, and cilantro.
- Add the lemon juice, minced garlic, red pepper flakes, and salt.
- Mix well until everything is evenly coated. Let the mixture rest for 5-10 minutes to allow the flavors to develop and the tomatoes to release a little juice.
» Toast the Baguette
- Slice the baguette diagonally and lightly brush each slice with olive oil.
- Toast in a pan over medium heat until golden and crisp on both sides.
» Assemble and Serve
- Spoon the whipped dip onto a shallow serving plate or bowl and spread it into an even layer using the back of a spoon.
- Spoon the marinated salad topping evenly over the whipped cottage cheese base.
- Drizzle chili oil over the top and sprinkle with chopped toasted pistachios.
- Serve immediately with warm toasted baguette slices.
RECIPE NOTES
- Taste and adjust salt or lemon before serving.
- Refrigerate the base for 20 to 30 minutes for a firmer texture.
- If too thick, add 1 teaspoon olive oil, milk, or water and blend again.
