» How to make Watermelon Sorbet

  1. Slice watermelon, remove the rind and cut into cubes. This would be about 4 cups (about 616 grams).
  2. Arrange watermelon cubes in a single layer on a parchment-lined baking tray.
  3. Freeze watermelon chunks for 4 hours or overnight.
  4. Add frozen watermelon chunks to the food processor or a high-power blender.
  5. Also add lime juice, and honey to it and puree until smooth. If watermelon is not hard without liquid, then you can add 2-3 tablespoons of warm water and press down with a spatula.
  6. Once done, add pureed watermelon to a freezer-safe container.
  7. Smooth out the top and cover with plastic wrap.
  8. Freeze for 2-4 hours or until firm and scoopable.
  9. Scoop sorbet into serving dishes and serve immediately.

RECIPE NOTES

  1. If you prefer the smooth texture of sorbet, you can serve it straight from the blender. But if you want a classic icy sorbet texture, then freeze it for up to 2-4 hours or until firm.
  2. Cutting watermelon is the only thing that takes time in this recipe. To cut down the time, you always cut and freeze watermelon in advance. You can also use readymade frozen watermelon cubes for this recipe.
  3. I used lime juice in this watermelon sorbet, but you can also use lemon juice.
  4. To make this watermelon sorbet vegan, replace honey with maple syrup.
  5. The amount of honey depends on the sweetness of the watermelon. If your watermelon is not very sweet, then feel free to increase the amount of honey to sweeten things up.
