» How To Make Watermelon Rind Stir Fry //

  1. Heat 3 tablespoons oil in a pan over medium heat.
  2. Add cumin seeds, fennel seeds, mustard seeds, and asafetida.
  3. Sauté for a few seconds or until fragrant. Once the seeds start to splutter and sizzle, add chopped ginger, garlic and sauté them for 1 minute.
  4. After that add chopped onions and sauté for 1 more minute.
  5. Add watermelon rind and stir well.
  6. Next, add salt, turmeric powder, and black pepper powder. Stir well to combine, and cook covered, for 10 minutes over medium-low heat, or until rind pieces are softened.
  7. Now add cumin powder, coriander powder, red chili powder, garam masala powder, and amchoor powder.
  8. Mix everything well to combine and cook for 2-3 minutes over medium-low heat.
  9. Now make some space in the center of the pan, and add 2 teaspoons oil and 2 tablespoons gram flour.
  10. Mix well and cook for 3-6 minutes over medium-low heat or until the raw smell of gram flour is gone.
  11. Serve hot with roti or paratha.

RECIPE NOTES

  1. I prefer to use the outer green layer of the rind, but feel free to remove it.
  2. You can also use some finely chopped potatoes to stir fry. Add them along with the watermelon rind.
  3. You can also make it sweet and tangy (khatti meethi) by adding some jaggery or sugar.
  4. I have used amchoor powder in this recipe. If you dont have amchoor powder, then replace it with some fresh lemon juice. Make sure that you add lemon juice at the end, right before turning off the heat.
  5. I used red chili powder and did not add any green chilies in this recipe. If you wish you can replace red chili powder with some chopped green chilies, or you can add them both.
  6. If you think 3 tablespoons oil is too much for you, then add only 5 tablespoons of oil. Splash the watermelon rind with some water before covering it with the lid.
  7. To get more rich flavours, you can also cook this stir fry in ghee.
