- Cut the mini watermelon in half. Scoop out some of the flesh from the center. Leave about 1 to 1½ inches around the edges to make a sturdy watermelon bowl. Cover the watermelon halves tightly with plastic wrap and freeze until completely solid, about 5 hours or overnight.
- Right before serving, whisk together the thick coconut milk, maple syrup, lime zest, and chopped pistachios until well combined.
- Remove the frozen watermelon from the freezer and uncover it. Then pour some of the coconut mixture into the hollowed center. Using a sturdy fork or a spoon, scrape the frozen watermelon while mixing it with the coconut mixture until it becomes fluffy, creamy, and resembles soft-serve ice cream.
- Scoop into serving bowls or glasses, or enjoy it straight from the frozen watermelon shell. Garnish with extra chopped pistachios, fresh mint leaves, and a drizzle of maple syrup or agave nectar, if desired. Serve immediately.
