RECIPE INSTRUCTIONS

» Making Vegetable Tahiri:

  1. In a pan heat 3 tablespoons of oil/ghee.
  2. Add bay leaf, black cardamom, cinnamon sticks, star anise, cloves, peppercorns, and let them roast for few seconds.
  3. Now, add cumin seeds, and let them splutter.
  4. Once they start to splutter add sliced onions and sauté for 3 minutes.
  5. Add diced potatoes and cook for 3 minutes.
  6. Now add crushed ginger, crushed garlic, and mix well. Let them cook for a minute.
  7. Add cauliflower florets, carrots, and green peas. Mix well and cook for 2 minutes.
  8. Add tomatoes and green chilies and cook for a minute.
  9. Now cover the pan with a lid and let it cook for five minutes.
  10. Transfer veggies to a larger pot, if you are using a separate pan for sautéing veggies like me.
  11. Now add the soaked rice to the veggie mixture and mix well.
  12. Now add salt, red chili powder, coriander powder, and mix well.
  13. Add 3 cups of water a stir well to combine.
  14. Add garam masala and mix well again.
  15. Cover the pan and let the rice simmer till its 95% cooked.
  16. Turn off the heat and let the rice sit for 10 minutes.
  17. Gently fluff the rice with a spatula and transfer it to a serving dish.
  18. Garnish with coriander leaves. Drizzle with some lemon juice and ghee. Serve svegetbale tahiri hot with plain yogurt or raita.

RECIPE NOTES

  1. Pressure cook tehri for 2-3 whistles on medium-high heat.
