- 5 tablespoons sugar
- 1 cup (240 ml) coconut cream, cold

- Wash the strawberries and remove the stems. Reserve 3-4 strawberries for garnishing. Add the remaining strawberries to a blender or food processor, along with the sugar. Blend the fresh strawberries into a smooth puree. You can use the puree as is or strain it for a smoother texture.
- In a small saucepan over medium heat, add the strawberry puree. Simmer for 5-7 minutes, stirring occasionally, until the mixture thickens slightly. This simmering step thickens the puree and helps create a firmer mousse without the use of gelatin or agar agar.
- Let the puree cool completely to room temperature. Once cooled, add it to a food processor, along with the coconut cream, and blend until smooth.
- Divide the strawberry mousse evenly among serving glasses or bowls. Garnish with sliced strawberries and refrigerate for at least 3-4 hours, or until set. Your Coconut Strawberry Mousse is ready to serve. Enjoy it chilled!
