RECIPE INGREDIENTS

- 300 g silken tofu
- 3½ tablespoons unsweetened cacao powder
- 6 soft dates, pitted (add more if you prefer a sweeter pudding)
- About 5 tablespoons milk of choice (around 75 ml)
- 3 tablespoons melted dark chocolate (75%)
- 1 teaspoon vanilla extract
- 1 teaspoon instant coffee
- ¼ teaspoon salt
» For Garnish
- Sliced strawberries
- Cacao powder, for dusting
- Shaved dark chocolate
RECIPE INSTRUCTIONS
» For making Silken Tofu Chocolate Pudding
- Add the silken tofu, cacao powder, salt, vanilla extract to a blender jar.
- Also add melted dark chocolate, dates, and milk. Blend until smooth and creamy.
- The add the instant coffee powder and blend again until silky smooth and fully combined.
- Pour the pudding into transparent serving glasses or dessert cups. Cover with plastic wrap and chill in the refrigerator for 1 to 2 hours, or until nicely set and thickened.
- Garnish with sliced strawberries, a dusting of cacao powder, and shaved dark chocolate before serving.
RECIPE NOTES
- Use soft dates or Medjool dates for the smoothest texture. If your dates are firm, soak them in warm water for 10 minutes first.
- Add 1 extra tablespoon of milk if you prefer a softer pudding texture.
- Instant coffee enhances the chocolate flavor without making the dessert taste like coffee.
- Blend thoroughly for the creamiest, lump-free pudding.
