  1. Add the silken tofu, cacao powder, salt, vanilla extract to a blender jar.
  2. Also add melted dark chocolate, dates, and milk. Blend until smooth and creamy.
  3. The add the instant coffee powder and blend again until silky smooth and fully combined.
  4. Pour the pudding into transparent serving glasses or dessert cups. Cover with plastic wrap and chill in the refrigerator for 1 to 2 hours, or until nicely set and thickened.
  5. Garnish with sliced strawberries, a dusting of cacao powder, and shaved dark chocolate before serving.

RECIPE NOTES

  1. Use soft dates or Medjool dates for the smoothest texture. If your dates are firm, soak them in warm water for 10 minutes first.
  2. Add 1 extra tablespoon of milk if you prefer a softer pudding texture.
  3. Instant coffee enhances the chocolate flavor without making the dessert taste like coffee.
