  1. Heat oil in a pan over medium heat.
  2. Once hot, add asafetida, cumin seeds and mustard seeds. Sauté for a few seconds.
  3. When the seeds start to crackle add add chopped onions and saute for a minute.
  4. Add salt, turmeric powder and mix well. Saute for another minute.
  5. Add chopped potatoes and cook for 2 more minutes.
  6. Now add chopped pumpkin rind and mix well and cook 1 minute.
  7. No add 3 tablespoons water and mix again. Cook covered for 5 minutes. Stir occasionally. Cook for few more minutes if potatoes are still raw.
  8. Add coriander powder, red chili powder and mix well.
  9. Mix well and cook for 2 minutes and remove from heat.
  10. Serve hot with steamed rice or any bread of your choice.
