» Making Peanut Ladoo

  1. Add 1 1/2 cup peanuts to a heavy-bottomed pan and roast the peanuts on medium-low heat until they become golden and crunchy. Keep the flame to low or medium and add the raw peanuts. Keep stirring continuously to get evenly roasted peanuts. Make sure peanuts are well roasted, raw peanuts won't make tasty ladoos. Alternatively, you can also roast the peanuts in an oven or a microwave.
  2. Once the peanuts are roasted, turn off the heat and transfer them onto a plate and let them cool at room temperature.
  3. When the peanuts come at room temperature, rub the peanuts using a paper napkin or between your palms, to peel off the skin. Keep rubbing until all the peanuts have shed the skin. Now discard the peanut skin using a steel spider strainer. Roasted peanuts are ready.
  4. Add the peanuts to a grinder jar and grind to make a powder. Now take out 2 tablespoons of peanut powder in a bowl and keep it aside for later use. This step is completely optional, if you don't want to coat ladoos with peanut powder then skip this step. Grind for a few more seconds.
  5. Now add jaggery, and cardamom powder to the grinder jar and grind or pulse for 30-40 seconds. Do it 4-5 times, you need to keep doing this step until the mixture turns into a coarse powder and starts releasing oil. Also, keep scrapping the sides of the jar after every grinding.
  6. To check the texture of the ground peanuts, take a small portion of the peanut jaggery mixture in your hands and then press, if it holds the shape then it is almost ready. Now grind for 30-40 seconds more. Make sure to not over-grind the peanuts, or else they would turn into peanut butter and you won't be able to shape them.
  7. Now transfer the mixture onto a plate and mix well with your hands. Pinch out a small portion of the ladoo mixture in your palms. Roll and shape it into peanut ladoos.
  8. You can serve ladoos as it is, but I like to roll them in roasted powdered peanuts to get a nice crunchy coating. Make ladoos until all the mixture is used up. The size of the ladoos depends on your choice, I have made about 14 ladoos with this mixture.Delicious peanut ladoos are ready, serve them as a healthy dessert or a sweet snack.

RECIPE NOTES

  1. If you want to make a large batch, then you can surely double or triple.
  2. You can store the peanuts ladoos in an air-tight jar at room temperature for 8-9 days.
  3. Nuts & dry fruits: You can also add chopped cashews, pistachios and almonds, and raisins to the ladoo mixture.
  4. If you like ghee in laddus, then you can pulse them with 1-2 tablespoons of melted ghee.
