RECIPE INGREDIENTS

- 1 cup almond flour
- ½ cup rolled oats
- ½ cup mixed nuts & seeds, roughly chopped
- 4 soft dates, finely chopped
- 4 dried figs, finely chopped
- 4 dried apricots, finely chopped
- ? cup peanut butter
- 1 tsp orange zest
- 2-4 tbsp almond or oat milk, as needed
- ½ cup 75% dark chocolate melted
- 1 tsp coconut oil
RECIPE INSTRUCTIONS
» How to Make No Bake Almond Energy Bars
- Add almond flour, rolled oats, chopped nuts and seeds, dates, dried figs, dried apricots, and orange zest to a large bowl.
- Add the peanut butter and mix everything well.
- Start by adding 2 tablespoons of oat milk and mix again. If the mixture still seems dry, add a little more, one tablespoon at a time. The mixture should be soft and sticky enough to hold together when pressed.
- Transfer the mixture to a parchment-lined surface and place another sheet of parchment paper on top.
- Flatten or roll it into an even layer using a rolling pin. Press it firmly so the no-bake energy bars hold together nicely. Chill for 30 minutes or until firm.
- Melt the dark chocolate with the coconut oil until smooth.
- Pour it over the chilled mixture and spread it evenly across the top.
- Sprinkle with flaky sea salt and orange zest, if desired. Chill again until the chocolate has set.
- Remove the slab from the refrigerator and slice into bars, rectangles, or squares. Enjoy your homemade no-bake almond energy bars.
RECIPE NOTES
- You can also use your favorite combination of nuts depending on what you have in your pantry.
- The milk should be added gradually, as the amount needed can vary depending on how soft and moist your dried fruits are.
