RECIPE INSTRUCTIONS

» Making Mushroom Pepper Pilaf //

  1. Heat 4 tablespoons oil in a non-stick pan. Add cloves, cinnamon stick, dried red chili, black cardamom, green cardamom, and saute for few seconds.
  2. Now add cumin seeds, coriander seeds and saute till they start to crackle.
  3. Add chopped garlic and saute for a minute.
  4. Add mushroom, onion, bell pepper, salt, turmeric powder, and kasuri methi. Saute for 5 minutes. Add curry powder and saute for 2-3 minutes.
  5. Add 4 cups of water rice, juice, and mix well.
  6. Bring it to the boil, and turn down the heat on medium-low. Cook covered for 25-30 mins or until rice is tender. Remove from heat.

» Making Honey Mustard Yogurt //

  1. Whisk ingredients together in a bowl until thoroughly mixed.

» Making Grilled Veggies //

  1. Preheat grill to high heat.
  2. Brush all the veggies with olive oil.
  3. Place vegetables on a grill rack coated with cooking spray. Grill cucumber and carrot 4 minutes on each side or until tender.
  4. Grill onion 6 minutes on each side or until tender.
  5. Grilled lemon wedges for 4 minutes or until tender.
  6. Sprinkle with pepper powder and salt.

» Serving //

  1. Transfer pilaf in a serving plate. Drizzle over some honey mustard yogurt. Top with chili peanuts and serve along with grilled veggies. Enjoy!
