RECIPE INSTRUCTIONS

» Making Patties //

  1. Preheat oven to 375 degrees F /190 degrees C, and lightly oil a baking sheet.
  2. In a medium bowl, mash mung beans with a fork. Keep mashing until they're mostly broken up, or until thick and pasty. Add bell pepper, onion, garlic, salt and pepper, egg, chili powder, cumin, and chili sauce. Add bread crumbs.
  3. Stir until everything is combined, or mixture is sticky and holds together.
  4. Divide mixture into 8 patties. Place them on a baking sheet. Top with some butter or brush oil. Flip it over and top the other side with butter/oil. Bake for about 10 minutes on each side or until they are brown and crisp.

» Making Fried Egg //

  1. Heat ¼ tsp tbsp oil in a pan over medium-high heat. Crack 1 egg into it. Sprinkle with salt and pepper. Cook 2 minutes. Flip it over and cook for few seconds. Remove from heat and repeat the same process with rest of the eggs.

» Making Caramelized Oranges //

  1. Sprinkle some sugar on the both sides of orange slices.
  2. Heat a pan over high heat. Add 1 teaspoon of olive oil and sear both sides of the oranges for about 1 minute.

» Assembling Mung Bean Pita Burger With Caramelized Oranges //

  1. To assemble, place 4 breads on a tray. Top each bread with lettuce. Place 1 burger, 1 fried egg, two slices of caramelized oranges on each bread. Top with 1 tomato slice, 1 onion slice, 1 pickled jalapeño. Drizzle with mayo, tomato sauce, and a spoonful mango chutney. Add the top bread and serve.
