RECIPE INSTRUCTIONS

» For making Mango Overnight Oats

  1. Mix 1 cup rolled oats, 1/4 cup mango puree, 1 tablespoon chia seeds, 1 cup milk, and 1 tablespoon sweetener in a medium mixing bowl.
  2. Add 1/2 cup milk or greek yogurt and mix again until all ingredients are thoroughly combined. Cover the bowl with the lid and refrigerate for 6-8 hours or overnight.
  3. Place a large mango on a chopping board. Peel the mango and cut it into cubes.
  4. Before serving, add the 1/4 cup of mango puree to the oats mixture and mix well. It adds more freshness and tropical flavors to these oats. Now add 1/2 cup of freshly diced mangoes and mix well to combine. At this point, you can add more milk if your oats are too thick.
  5. Divide 1/4 cup mango puree between 2 glasses or jars. Spoon overnight oats mixture evenly into both glasses. Top each glass with mango chunks, toasted coconut, sunflower seeds, and a drizzle of mango puree. Serve chilled.

RECIPE NOTES

  1. Use Gluten-Free Oats: To make overnight mango oats gluten-free, make sure to use gluten-free oats.
  2. I used fresh mango pieces, but can also use frozen mango chunks if you are making this overnight mango oats in the winter. Just thaw the frozen mangoes overnight in the refrigerator.
  3. To dilute the oats, you can use milk, yogurt, or water. You can also use mango juice for tropical flavors.
  4. This mango overnight oat has a creamy pudding-like consistency. You can easily make it thinner by adding more liquid.
