RECIPE INSTRUCTIONS

» Prepare Carrots:

  1. Peel and slice carrots into two. Set them aside.

» Pressure Cook Carrots:

  1. In the pressure cooker, heat 2 tablespoons of ghee. Add the crushed saffron strands. Roughly crush cardamom pods and add them to the pressure cooker. Add carrots and sauté for 1 minute. Next, add a pinch of salt and sauté for 2-3 minutes until they are slightly cooked. Add 1 cup of milk and stir. Cover the lid and pressure cook the mixture for 2 whistles on medium heat.

» Cook Instant Gajar Halwa:

  1. Allow the pressure to cool off before opening the lid. Once the pressure comes down, open the lid and stir. Add 3 cups of milk and mix well. Let it boil over medium heat while stirring occasionally. Once the milk is almost dried, mash the carrots using a ladle or a potato masher. Next, add 1 cup of sweetened condensed milk and mix well. Cook for 2-3 minutes.
  2. In the meanwhile, heat 2 tablespoons of ghee in a small pan. Add chopped almonds and cashews and fry for 1 minute. Also, add the raisins and fry for a minute or until the dry fruits are slightly golden. Add the fried dry fruits to the mashed carrots and mix well.
  3. Also, add 1/2 cup crumbled mawa/dried milk to the halwa and mix well. This will add a rich and creamy texture. Cook the halwa on low heat, stirring continuously until it thickens and the ghee starts to separate from the mixture. Garnish the Gajar Halwa with chopped nuts, dried rose petals, and edible silver/golden leaves. Serve warm and enjoy this delicious Instant Gajar Halwa!

RECIPE NOTES

  1. To achieve the perfect creamy consistency and delicious flavor, it is advised to use milk as a liquid.
  2. To avoid sticking, make sure to keep stirring the halwa after adding milk. This step also helps in achieving a creamy and lump-free halwa texture.
  3. I have used sweetened condensed milk to sweeten this halwa. Feel free to adjust the sweetness to your preference. Alternatively, you can also use sugar to sweeten this gajar halwa.
  4. I have sliced the carrots into two pieces, but you can also use whole carrots for making this halwa.
