  1. Slice the honeydew melon into thick discs. Trim away the rind, scoop out and discard the seeds, then cut the flesh into 1-inch cubes.
  2. Peel the mandarins and gently separate them into segments. If the segments are large, cut them into bite-sized pieces.
  3. Cut feta into 1-inch cubes.
  4. In a shallow bowl, combine the dried oregano, red chili flakes, and chopped parsley. Mix well.
  5. Coat each feta cube evenly with the herbed seasoning on all sides. Once all the feta cubes are coated, set them aside. Be gentle to keep the cubes intact.
  6. In a small bowl, whisk together the orange juice, olive oil, Dijon mustard, honey, salt, and black pepper until smooth and slightly emulsified. Stir in the chopped parsley and mix until combined. Set aside.
  7. Thread one honeydew melon cube, one seasoned feta cube, one mandarin segment, and another honeydew melon cube onto each cocktail skewer. Repeat with the remaining ingredients.
