RECIPE INSTRUCTIONS

» How to Make Gulkand Paratha Stuffing: //

  1. In a mixing bowl, add gulkand, fennel seeds, sesame seeds, cardamom powder, chopped nuts, and mix well to combine.

» How to Make Gulkand Raita: //

  1. In a mixing bowl, add yogurt, gulkand mixture, honey, and whisk well.
  2. Refrigerate for 30 minutes.

» How to Make Gulkand Paratha: //

  1. Spread some flour and roll out one dough ball into a circle of 4 inch diameter.
  2. Place 1 tablespoon gulkand mixture in the center of the dough circle.
  3. Bring together all the sides in the center and seal edges tightly.
  4. Roll out again into a circle of 6 inch diameter with the help of some flour.
  5. Heat a pan. Roast rolled circles from both sides.
  6. Apply ghee on both sides. Roast until golden brown from pboth sides. Repeat with the remaining dough and filling to make more parathas.

» Serving: //

  1. Cut parathas into 4 equal pieces. Drizzle with some honey and sprinkle with chopped nuts and dried rose petals.
  2. Serve hot gulkand parathas with chilled gulkand raita.

RECIPE NOTES

  1. To make it vegan, replace ghee with oil/margarine, honey with sugar/maple syrup, and yogurt with coconut yogurt.
