RECIPE INSTRUCTIONS

» Making grilled peaches with cheese and honey

  1. Cut the peaches in half, lengthwise, and remove the stone. You can use halves or quarter them as I did.
  2. Preheat a stove-top griddle pan or grill on medium heat. Drizzle or spray the olive oil on the griddle pan. Place the peaches on a griddle pan, flesh side down. Spray the top with more olive oil and grill for 2 minutes or until peaches are grilled and caramelized. Flip and grill the peaches from another side as well.
  3. Meanwhile, slice the cheese into 1/2 inch pieces and keep it aside. Also, roughly chop the walnuts.
  4. Once the peaches are grilled from all sides and nicely charred, transfer them to a serving plate. Top each hot grilled peach piece with cheese. This step would allow the cheese to melt slightly. Sprinkle with roughly chopped mint, parsley.
  5. Top with walnuts and drizzle with honey. Sprinkle with a pinch of salt, ground black pepper, and dried oregano. Enjoy warm!

RECIPE NOTES

  1. I have grilled peaches using olive oil, you can also use butter for grilling. It tastes best specially if you are planning to serve them with whipped cream or ice cream
  2. Adding dried oregano and salt is entirely optional in this recipe.
  3. Peach kabobs - You can also make peach kabobs by threading peaches into a skewer.
