RECIPE INGREDIENTS

- 2 medium ripe mangoes (about 2 cups diced mango flesh)
- ½ cup plain Greek yogurt
- ½ cup coconut cream (or cashew cream or heavy cream)
- 2-3 tablespoons maple syrup, or to taste
- ½ teaspoon ground cardamom

- 200 g dark chocolate, chopped
» Optional Garnishes
- Chopped pistachios
- Dried edible rose petals
- Melted sugar-free white chocolate, for drizzling
- Edible gold glitter
RECIPE INSTRUCTIONS
» How to Make Frozen Mango Lassi Bites
- Slice each mango in half, avoiding the pit. Score the flesh in a crisscross pattern, then scoop it out with a spoon. You will need about 2 cups of mango flesh.
- Add the mango chunks, Greek yogurt, coconut cream, maple syrup, and ground cardamom to a blender. Blend until completely smooth and thick.
- Spoon or pour the mixture into silicone muffin cups or silicone ice cube molds. Freeze for 4-6 hours, or until completely firm.
- Place the chopped dark chocolate in a microwave-safe bowl. Microwave in 20-second intervals, stirring after each interval, until smooth and melted. Remove the frozen mango lassi bites from the molds.
- Dip each bite halfway into the melted chocolate, letting the excess drip off. Before the chocolate sets completely, sprinkle with chopped pistachios and dried rose petals.
- Drizzle with melted sugar-free white chocolate and, if desired, finish with edible gold glitter. Enjoy immediately, or store in the freezer until ready to serve.
RECIPE NOTES
- Adjust the maple syrup depending on the sweetness of your mangoes.
- Coconut cream gives the richest texture, but cashew cream or heavy cream work well too.
- Silicone molds make removing the frozen bites much easier.
- Keep the bites frozen until serving for the creamiest texture.
