RECIPE INSTRUCTIONS

» How to Make Frozen Mango Lassi Bites

  1. Slice each mango in half, avoiding the pit. Score the flesh in a crisscross pattern, then scoop it out with a spoon. You will need about 2 cups of mango flesh.
  2. Add the mango chunks, Greek yogurt, coconut cream, maple syrup, and ground cardamom to a blender. Blend until completely smooth and thick.
  3. Spoon or pour the mixture into silicone muffin cups or silicone ice cube molds. Freeze for 4-6 hours, or until completely firm.
  4. Place the chopped dark chocolate in a microwave-safe bowl. Microwave in 20-second intervals, stirring after each interval, until smooth and melted. Remove the frozen mango lassi bites from the molds.
  5. Dip each bite halfway into the melted chocolate, letting the excess drip off. Before the chocolate sets completely, sprinkle with chopped pistachios and dried rose petals.
  6. Drizzle with melted sugar-free white chocolate and, if desired, finish with edible gold glitter. Enjoy immediately, or store in the freezer until ready to serve.

RECIPE NOTES

  1. Adjust the maple syrup depending on the sweetness of your mangoes.
  2. Coconut cream gives the richest texture, but cashew cream or heavy cream work well too.
  3. Silicone molds make removing the frozen bites much easier.
  4. Keep the bites frozen until serving for the creamiest texture.
