» How to Make Eggless Strawberry Brownies

  1. Preheat the oven to 180°C (350°F). Chop about 100 g of fresh strawberries into small-to-medium chunks. Spread them on a paper towel, top with another paper towel, and press to absorb excess liquid. Set them aside.
  2. Chop dark chocolate. In a large bowl, place the chopped chocolate and butter. Melt completely over a bain-marie. You can also melt it in the microwave until all the chocolate pieces are fully melted.
  3. Add the vanilla extract, granulated sugar and brown sugar, and mix until well combined.
  4. Then add the yogurt (unsweetened plain or Greek, at room temperature) and mix well. Sift in the flour and cocoa powder, and mix well.
  5. Add the baking powder and salt, and mix until just combined. Do not overmix the batter! Fold in the chopped and dried strawberries, along with 50 grams of chopped chocolate.
  6. Pour the batter into a lined 9x9-inch square cake pan. Spread it evenly. Add the strawberry jam on top of the batter and use a toothpick to create swirls. Top with some strawberry slices.
  7. Place the baking pan into the preheated oven and bake at 180°C (350°F) for 30 minutes, or until a toothpick inserted in multiple spots comes out clean. Do not overbake-the brownies are done when the toothpick comes out clean. Remove the pan from the oven and let the brownies cool slightly before removing them from the pan.
  8. Once slightly cool, remove from the pan and let cool completely on a wire rack for at least 1 hour before slicing. Slice into 9 large or 16 small squares. Your delicious eggless strawberry brownies are ready to serve!

RECIPE NOTES

  1. Always dry the chopped strawberries to prevent a soggy texture in the brownies. You can also coat them with flour before adding them to the batter.
  2. Use good-quality dark bittersweet chocolate. You can use upto 70%, but not too dark or bitter in flavor.
