» Making Curried Egg Salad Sandwich //

  1. Heat a grill pan, and toast or grill bread slices.
  2. Once grilled, set them aside.
  3. Add eggs, cucumber, onion, chilies, curry powder, salt, pepper, dijon vinaigrette to a mixing bowl.
  4. Stir well until combined.
  5. Smear margarine/butter on toasted bread slices.
  6. Spread arugula lettuce, and top with 2 spoonfuls of curried egg salad.
  7. Add some more arugula top and drizzle with sriracha sauce.
  8. Close sandwich with toasted and buttered bread slice.
  9. Cut each sandwich in half.
  10. Transfer to a serving plate and serve with some hot tea/coffee.

RECIPE NOTES

  1. I used arugula leaves, you can use any other lettuce of your choice.
