RECIPE INSTRUCTIONS

» Cooking Couscous //

  1. Bring water to boil.
  2. Add uncooked couscous, salt and oil.
  3. Mix well and cook for 4-5 minutes or until cooked.
  4. Fluff with a spoon/fork, and set aside.

» Making Sauteed Mushroom Kidney Beans //

  1. Heat oil in a large nonstick skillet.
  2. Add chopped garlic and saute for few seconds.
  3. Add ginger paste and saute.
  4. Now add onions, and stir-fry them for 2 minutes.
  5. Add mushroom and cook for 3 more minutes.
  6. Add tomato paste a cook for a minute.
  7. Now add maple syrup, soya sauce, vinegar, salt and sriracha sauce.
  8. Mix well and cook for 2 minutes.
  9. Add cooked kidney beans and cook for 1-2 minutes or until thickened.
  10. Add chopped spring onions and cooked for few seconds.
  11. Serve Sauteed Mushroom Kidney Beans hot with cooked couscous. Enjoy!
